US respondents' willingness to pay for Cheddar cheese from dairy cattle with different pasture access, antibiotic use, and dehorning practices

Abstract: Cheese is a widely consumed product in American diets and an important economic driver of US dairy markets. Given the widespread interest in credence attributes of fluid dairy products, the lack of knowledge of demand for animal welfare, environmental, and other credence attributes in cheeses is surprising. Increasing attention surrounding dairy cattle welfare has been placed on the disbudding or dehorning of dairy cattle, in addition to the longer term debates surrounding pasture access and antibiotic use. “…The appearance is the first attribute evaluated by consumers and the visual information of the samples strongly influences the hedonic scores (Zampini et al 2007). Satisfaction of these extrinsic aspects can influence overall liking, and thus purchase intent and even willingness to pay a premium, particularly for dairy products (Bir et al 2020;Scozzafava et al 2020). Hay et al (2021) investigated consumer sensory preferences for drinkable yoghurt and the impact of provenance using Chinese, European and New Zealand consumers.…”

That said, willingness to pay for dairy products has been related to the provision of outdoor or pasture access (Bir et al, 2020;Wolf and Tonsor, 2021). Other participants thought that the public is unaware that conventional farms do not generally provide pasture access to their lactating cows: "I think the public does not fully understand if cows are inside or not" (G3_P2).…”
