The aim of this study is to examine the effect that visitor satisfaction with traditional restaurants has on perceptions of the local gastronomy, the overall image of a city and loyalty to that destination. Fieldwork has been carried out in Córdoba, a city in southern Spain famous for being a UNESCO World Heritage city and for its traditional gastronomy. The methodology used is based on structural equation modeling (PLS-SEM). This paper makes a novel contribution in that no previous studies to date have explored satisfaction with traditional restaurants, with respect to the food, the service and the atmosphere. To achieve the proposed objective, a structured questionnaire has been used to find out the opinions of diners in renowned restaurants that base their cuisine on traditional dishes made with quality local ingredients. The results obtained confirm that a satisfactory experience with the food of a traditional restaurant has a positive effect on the image of the destination and the gastronomy of the place, as well as on visitors’ intentions to recommend and repeat the visit to said destination. Based on the analysis carried out, effective strategies are suggested to help manage these types of restaurants. The study provides theoretical and practical implications from a gastronomic perspective, which can enable tourism managers to employ new strategies to retain tourists visiting a city, based on increasing their post-experience satisfaction with restaurants featuring local cuisine.

Food tourism is one of the creative branches of tourism which plays a substantial role in sustainable development. Iran's capacities for developing food tourism have attracted the attention of tourism stakeholders towards this field. Policies were formed in line with its improvement. This paper aims to analyze the food tourism policy in Iran. The policy triangle was used to conduct a qualitative analysis on policy. The total population under the study included various stakeholders of food tourism policy as well as the policy documents. The entire credible documents were analyzed at the first stage rather than carrying out sampling. In the second stage, semi-structured in-depth interviews were conducted with food tourism stakeholders. Results show that factors such as food culture and decreased national income have paved the way for focusing on food tourism. Policies such as global registration of Iranian foods and branding certain cities as creative food cities were implemented to develop food tourism in Iran. Despite preparing a set of strategies to develop food tourism, a unified approach to involve this branch of tourism in the agenda there has never been tried. Given the rich culture of Iranian foods' great ability, it is proposed that associated officials carry out coordinated and comprehensive planning to develop food tourism in Iran.

This research aims to formulate sociological research opportunities in food tourism. The study used the literature review method with bibliometric analysis to find the most discussed issues and opportunities for discussing new problems that have yet to be widely discussed. This research used VOSViewer software edition 1.6.18 to analyze 3,055 research articles on the ScienceDirect website from 1999-2023. The publication period is divided into three according to the ability to download, which can only download 1000 articles in each period. This research analyzed the development of publications, publishers, scope, main keywords, clusters, density visualization maps, overlays, and research networks. The analysis found that the research on the sociology of food tourism has increased, but sociology journals have yet to become publishers with the highest number of articles. Research opportunities exist on the topics of policy, inequality, and migration. Opportunities also exist in relating new and old issues to other matters. Previous studies have yet to study many interactions between actors providing food and other actors forming food tourism destinations. It is suggested that further research covers the topics of policy, inequality, migration, sociological theorizing of food tourism, and interactions between actors in the production of tourist attractions.
