Food supply is the most important component of the life support system and indicator of the population quality of life [1, 2]. In the scientific work, the assessment of the food supply level of the region was carried out, using the example of the Saratov region. The authors have identified the dynamics of indicators characterizing the food security of the region: acreage, livestock and poultry population, cost of agricultural products produced, cost of importing food and agricultural raw materials. The production dynamics of certain types of products, their production and personal consumption, as well as losses by volume are considered. With the help of these indicators, the level of self-sufficiency of the Saratov region with food resources of its own production is determined. The dynamics of the staple food consumption and the diet compliance with the recommended norms in kilograms per person per year are considered. The consumption by residents of the Saratov region of such types of food as potato, meat and meat products, vegetables, milk and dairy products does not comply with scientifically established medical standards, which causes a high share of imported products in actual food consumption and threatens the food security of the region.

This article presents the results of the study of the dependence of yield stress (YS) and water-binding capacity (WBC) on mechanical processing of meat and bone raw materials when changing the rotational speed and the gap between the rotary knives of the grinder. It is revealed that the parameters of YS and WBC also increase when the rotational speed increases. Thus, the highest values of YS (943.29 Pa) and WBC (66.98%) are observed when the rotary knives’ rotational speed is 4000 min−1 and the clearance between knives is 0.16 mm, while the lowest values of YS (635.87 Pa) and WBC (63.83%) are observed when the knives’ rotational speed is 1000 min−1 and the clearance is 0.38 mm. The power consumption of the electric motor of the unit increases as the rotation speed of the working bodies increases and the gap between the knives decreases.

The present article presents an evaluation of economic efficiency of the introduction of meals acoustic freezing. Based on the initial data, like the amount of investments, the volume of products and the main competitive advantages of the technology under consideration, the main economic indicators were calculated. It has been proved that the introduction of new technology will increase the organization’s revenue due to its capability to increase the selling prices for frozen meals with new quality properties. The profitability of the new production line accounted for 11%. The payback period for implementation of this technical solution will be less than 2.5 years. It has been proved that the technology of meals freezing with application of acoustic effects is cost-effective.
