Introduction Fatty acids and monoglycerides are two groups of lipid compounds that can be produced from vegetable oils or animal fats. Vegetable oil is a triglyceride compound, also known as triacylglycerol or glycerol triester, with the acyl group that comes from a fatty acid. The type of vegetable oil is determined by the kind of fatty acid that is bound to triglycerides. Triglycerides of vegetable oils comprises of certain major fatty acids with some other minor fatty acids. For example, the coconut oil Cocos nucifera L. , the castor oil Ricinus communis L. , the olive oil, the sunflower oil, the palm oil contains 54 lauric acid 1 , 93 ricinoleic acid 2 , oleic acids 3 , oleic and linoleic acid 4 and palmitic acid 5 , respectively. Kabate larva oils could be produced from its larva through soxhlet extraction using n-hexane. Kabate larva, which locally in Timor Island called, can be found in the wounded stem of Sesbania gradiflora L. tree. In this work, the physicochemical properties and the fatty acid composition of Kabate larva oils were evaluated. Kabate larva oils was afforded as viscous yellow liquid with acid value, saponification value, peroxide number, iodine number, kinematic viscosity (at 100 °C) and specific gravity (15 °C) properties were 1.58 mg KOH/g; 111.28 mg KOH/g; 2.1554 meg/kg; 44.1426; 0.8159 g/mL; 40.57 mm 2 /s respectively. Based on the GC-MS analysis, it has been found out that fatty acids composition in Kabate larva oil were identified as a palmitic and oleic acid with a percentage value of 43.57 and 56.43% respectively.

Parametric Study in Production of Virgin Coconut Oil by Fermentation Method

Fermentation by using Saccharomyces cerevisiae is a potential method to produce the Virgin Coconut Oil (VCO). A parametric study using Box-behnken design was used to evaluate interaction effect of stirring speed, inoculum concentration and fermentation time on the percentage of oil recovery. The results indicated that fermentation time is most significantly affecting the rate of oil recovery. The surface and contour plots show that the oil recovery is gained up to 88.607% for stirring speed of 175-250 rpm, inoculum concentration of 0.2-0.3% (w/v), and fermentation time of 16-24 hours. GC analysis results indicate that the high lauric acid content of 53.0249%, is obtained when stirring speed of 200 rpm, inoculum concentration of 0.3% (w/v) and fermentation time of 24 hours. A parametric study has been successfully implemented in the production of VCO using fermentation method with the coefficient of determination (R 2 ) of 97.57%.
