Surtos de doenças transmitidas por alimentos em Manaus, Amazonas (2005-2009): o problema do queijo coalho

Abstract: A falta de inocuidade dos alimentos pode gerar doença alimentar. O queijo é considerado um veículo frequente de patógenos de origem alimentar, em especial, os queijos frescos artesanais. Pretende-se com este estudo verificar a incidência de surtos de Doenças Transmitidas por Alimentos (DTA) notificados pela vigilância epidemiológica e identificar o risco de consumo de queijo coalho.
