Food Sci., 28: 206-212.The influence of the solvent, temperature, and extraction time on the extractability of total polyphenols from milled soybeans variety Ika was investigated. The study was performed in order to select the most suitable solvent (water; 50, 60, 70, and 80% aqueous ethanol) for achieving the highest yield of total polyphenols. The most effective solvent (50% aqueous ethanol solution) was used for monitoring the kinetics and modelling of solid-liquid extraction of total polyphenols from soybeans, average particle size 0.459 mm, at solid-liquid ratio of 20 ml/g (ratio of the solvent volume per g of raw material). The total polyphenols content in the soybean extract was determined spectrophotometrically using Folin-Ciocalteu micro-methods at 765 nm. The applicability of different mathematical models (Peleg, Page, and Logarithmic models) to describe the kinetics of the solid-liquid extraction process of total polyphenols from soybeans was studied as well. The results exhibited a significant influence of the solvent and temperature on the kinetics and extraction yield of total polyphenols from soybeans. The best extraction yield of total polyphenols was obtained using 50% aqueous ethanol solution at 80°C after 120 min (4.322 mg GAE/g db ). The extraction yield of total polyphenols in soybean extracts increased by increasing the extraction temperature and extending the duration of the extraction process. The mathematical models applied showed a good agreement with the experimental results, which allows their application in modelling and optimisation of solid-liquid extraction process for the extraction of total polyphenols from soybeans.

O objetivo do trabalho foi caracterizar a evolução da maturação fenólica das videiras 'Alicante' e 'Syrah' (Vitis vinifera L.) cultivadas fora de época. A área experimental foi instalada em uma propriedade pertencente à Vinícola Intervin®, localizada em Maringá-PR. Os vinhedos foram estabelecidos em julho de 2001, e as plantas foram conduzidas no sistema latada (4,0 x 1,5 m), enxertadas sobre o porta-enxerto IAC 766 'Campinas'. As podas curtas de formação (duas gemas) foram realizadas no fim do mês de agosto de 2007 e 2008, e as podas longas de produção (oito gemas) foram realizadas no fim de fevereiro de 2008 e 2009. As avaliações foram realizadas em duas safras fora de época (2008 e 2009), a partir do início da maturação das uvas até sete dias após a colheita. Foram utilizadas 20 plantas representativas de cada variedade. Para a evolução da maturação fenólica das uvas, foi determinado o teor de antocianinas e o índice de polifenóis totais (IPT) do mosto das bagas. Por ocasião da colheita, foi avaliado o teor de resveratrol do mosto das uvas. Para a 'Alicante', a média do teor de antocianinas foi de 55,4 mg 100g-1, IPT de 474,0 mg 100g-1 e teor de resveratrol de 7,6 µg g-1. Para a 'Syrah', observou-se teor médio de antocianinas de 44,8 mg 100g-1, IPT de 487,7 mg 100g-1 e teor de resveratrol de 6,4 µg g-1. Considera-se que a evolução da maturação fenólica das uvas estudadas neste trabalho (progressiva para antocianinas e oscilatória para IPT) e o teor dos compostos fenólicos no momento da colheita são adequados para que estas sejam utilizadas como matéria-prima na elaboração de vinhos finos.

A B S T R A C TIn this study, oranges of the cultivar 'Valencia Delta' were degreened, coated with carnaúba-based wax and stored under refrigeration. The influence of the application of exogenous ethylene and coating was observed on physical and physico-chemical properties of the fruits. After the application of the treatments, the fruits were refrigerated (7 ± 2 o C) for a period of 35 days. The analyzed variables included weight loss, peel color, titratable acidity, ascorbic acid, total soluble sugars, reducing sugars, total polyphenols and total chlorophyll of the peel. The coated fruits showed significant reduction in weight loss when compared with the uncoated fruits, which lost about 3.0% of moisture at the end of the experiment. Significant reduction in the values of hue angle, accompanied by sharp deterioration in chlorophyll contents, suggested that the applied ethylene concentration was efficient in reducing green peel color. The contents of total polyphenols, total soluble sugars and reducing sugars increased while ascorbic acid decreased. The application of the coating, after degreening, was fundamental in maintaining the quality of the 'Valencia Delta' orange during storage.Qualidade de laranja 'Valência Delta' após desverdecimento e recobrimento com cera R E S U M O Laranjas da cultivar 'Valência Delta' foram, no presente trabalho, desverdecidas, recobertas com cera à base de carnaúba e armazenadas sob refrigeração. Observou-se a influência da aplicação do etileno exógeno e do recobrimento nas propriedades físicas e físico-químicas dos frutos; após a aplicação dos tratamentos os frutos foram refrigerados (7 ± 2 o C) durante 35 dias; as variáveis analisadas incluíram perda de massa, coloração da casca, acidez titulável, ácido ascórbico, açúcares solúveis totais e redutores, polifenois totais e clorofila total da casca. Os frutos recobertos apresentaram redução significativa na perda de massa quando comparados com os frutos não recobertos que perderam aproximadamente 3,0% de umidade ao final do experimento. Redução significativa nos valores de ângulo hue acompanhada de degradação acentuada nos teores de clorofila sugeriu que a concentração de etileno aplicada foi eficiente na redução da coloração verde da casca. Os teores de polifenois totais, açúcares solúveis totais e redutores aumentaram enquanto o de ácido ascórbico decresceu. A aplicação de recobrimento após o desverdecimento foi fundamental na manutenção da qualidade da laranja 'Valência Delta' durante o armazenamento.
