PurposeIn order to meet the increasingly demanding needs of international markets, quality and food safety systems have become widespread among companies in the agri-food sector. This has led to a transformation of the agri-food sector that has also been detrimental for companies seeking to adopt such standards. Therefore, the aim of this paper is to define the determining factors that affect the process of adopting quality and food safety standards in agri–food companies, from the implementation of standards in company quality management systems to the process of certification of these standards.Design/methodology/approachTo this end, a literature review is carried out in which the motivations, benefits, barriers and contingency factors are identified, analyzing and delimiting the scope and contribution of each of them to the company’s quality management.FindingsThe results show that the most important benefits and motivations are access to new markets and compliance with legislation, while the most important barrier is the high cost of adopting QFS systems within the company. Finally, the most relevant contingency factor when adopting these systems is the size of the company. Furthermore, the analysis shows that the results are closely interrelated. In conclusion, the consideration of the determinants identified in the paper contributes to a better implementation of agri-food quality and safety standards by companies.Originality/valueThis paper combines an analysis of the determining factors for the adoption of quality systems in the agri-food industry with the identification of contingency factors that, despite their importance throughout the process, are scarcely analysed in the rest of the literature. Finally, the work points out future lines of research that are still underexplored, such as the relationship between quality assurance and financial development; the role of contingency factors in the process of adopting these systems and the analysis of HACCP systems in the agri-food sector.

El sistema agroalimentario depende de variaciones globales como los cambios económicos que generan inseguridad o insuficiencia alimentaria, además de la actual emergencia sanitaria que afecta, principalmente, a pequeños productores de zonas rurales. Este trabajo revisa las condiciones de los productores rurales de la Ciudad de México y propone una estructura que fomenta la viabilidad del sistema agroalimentario. El estudio se hizo en dos etapas, primero se utilizó la Etnografía y posteriormente desde el Enfoque Sistémico se aplicó la Metodología de Sistemas Suaves para contextualizar las afectaciones de la actual emergencia sanitaria en esta zona. Los resultados muestran que estas comunidades hacen frente a la pandemia desde sus limitadas capacidades, por lo que se necesitan mecanismos y estructuras de organización que den solidez a los sistemas alimentarios para enfrentar los retos que presenta su entorno. Se propone que la vinculación necesaria se plantee a partir de modelos sistémicos capaces de manejar la complejidad de los sistemas rurales, como el uso conjunto de la Metodología de Sistemas Suaves y el Modelo de Sistema Viable, que a través de sus funciones sistémicas procesan la complejidad ambiental y mejoran la adaptación al entorno para garantizar su supervivencia.

Objective: To describe the systematization of the Nile tilapia cultivation process using a computer system for production and marketing traceability based on ISO 12877:2011 standard and web technologies. Design/methodology/approach: A documentary and field investigation were conducted to learn about the Nile tilapia production process currently applied; traceability was evaluated based on Double T and María del Carmen study cases, aquaculture farms located in the municipalities of Manzanillo and Armería located in the state of Colima, México; the process was contrasted with the ISO standard and the system was developed and implemented. Results: A Traceability System that records backward, internal, and forward procedural activities in the cultivation and marketing of tilapia. The system improves food safety control by registering lot care based on the ISO standard, resulting in well-defined traceable processes in the production and commercialization of the Nilotic tilapia. Limitations on study/implications: The results shown are related to the development and implementation of the system; however future work is yet to be carried out to assess its effect on the production and commercialization of farmed tilapia, as well as the efficiency of traceability. Findings/conclusions: The system was developed taking into consideration the necessary indicators for an ISO certification. Hence, aside from simplifying the registration and consultation of information, the producing company has the benefit of earning a certification for the aquaculture production process, creating additional value to its products.
