Research progress of functional lactic acid bacteria

Abstract: Abstract. Lactic acid bacteria are closely related to health, in recent years, experts and scholars at home and abroad have been continuously exploring the function of lactic acid bacteria. This article introduced antioxidant, decrease cholesterol, reduce blood press, immune function, produce bacteriocin, and compose vitamins functions of lactic acid bacteria. To provide reference for further development and utilization of functional lactic acid bacteria Introduction.

“…In previous studies, the antifungal substances of LAB can secrete and produce are mainly organic acids, fatty acids, bacteriocins, hydrogen peroxide, carbon dioxide, cyclic dipeptide, and other antibacterial substances during the growth process, which can inhibit the growth of pathogenic Escherichia coli , Staphylococcus aureus , Streptococcus suis , etc., this feature promotes the intestinal health of humans and animals ( Jang et al, 2016 ; Wang et al, 2020 ; Li and Gong, 2022 ). As shown in Table 1 , W. cibaria BYL4.2 has inhibitory effects on E. coli , S. aureus , Pseudomonas aeruginosa , and Listeria monocytogenes , and the inhibition zones are 25.33 ± 0.58, 22.67 ± 1.15, 18.00 ± 0.00, and 17.67 ± 0.58, respectively.…”

“…Probiotics can improve and regulate intestinal health, effectively relieve intestinal discomfort such as constipation, diarrhea, inflammatory gastrointestinal diseases, irritable bowel syndrome, and FD, and protect intestinal health to the greatest extent [ 57 , 58 , 59 ]. Through their colonization of the intestinal mucosa and interactions with the mucus layer, probiotics regulate the immune response, thus enhancing the ability to ward off external threats [ 60 ]. Following their establishment in the intestinal tract, the bioactive compounds responsible for their beneficial effects can help to maintain the equilibrium of the gut microbiota; this includes boosting the population of beneficial bacteria in the intestinal ecosystem while decreasing the abundance of harmful bacteria, ultimately bolstering intestinal immunity [ 61 ].…”

“…Bioactive peptides can act as immune modulators ( Qian et al, 2011 ), and are antihypertensive by inhibiting angiotensin-converting enzyme (ACE) ( Phelan et al, 2014 ), as in yogurts ( Papadimitriou et al, 2007 ) and antioxidants as in sourdough ( Coda et al, 2012 ) and yogurt ( Sabeena Farvin et al, 2010 ). Antioxidant peptides have been found in soybean milk fermented by LAB and these can effectively eliminate free radicals ( Liu et al, 2017 ). Antioxidant properties may also be the consequence of EPS production ( Rahbar Saadat et al, 2019 ).…”
