Quality Characteristics and Antioxidant Activity of Yanggaeng Made with Barley Sprout Powder

Abstract: This study investigated the quality characteristics and antioxidant activity of Yanggaeng made with different amounts of barley sprout powder. Barley sprout powder was incorporated into Yanggaeng at 0, 3, 6, 9, and 12% by weight based on total weight of red bean paste and barley sprout powder. The pH level of Yanggaeng reduced significantly on increasing the percentage of barley sprout powder (P<0.05). °Brix values of Yanggaeng produced varied from 3.07 to 3.17, but differences were not significant (P>0.05). I… Show more

“…In the case of barley sprouts, chromaticity, which includes measures of lightness, redness, and yellowness, has been used as an indicator [ 36 ]. This measurement index allows for the assessment of color characteristics in barley sprouts, providing valuable information on their quality and visual appeal.…”

“…Quercetin and gallic acid were employed as reference materials for TFC and TPC measurement, respectively, and the results were reported as quercetin equivalents (mg QE/g) and gallic acid equivalents (μg GAE/g), respectively. The 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging capacities were also determined following previously published protocols ( Kim and Yook, 2022 ; Lee et al, 2022 ).…”

“…Therefore, research on Yanggaeng production, which includes various natural ingredients with physiological benefits, has become more active. For example, studies have reported adding ingredients such as barley sprouts [10], black ginger [11], finger root powder [12], tomatoes [3], mugwort powder [13], aronia juice [1], Enteromorpha prolifera [14], Hallabong orange [15], green tea powder [16], and paprika [17] to enhance the nutrition density and physiological properties of Yanggaeng.…”
