Protective effects of fermented rice vinegar sediment (Kurozu moromimatsu) in a diethylnitrosamine-induced hepatocellular carcinoma animal model

Abstract: Kurozu moromimatsu is the sediment of Kurozu, a jar-fermented Japanese black vinegar produced from unpolished rice. Here, we examined the protective effects of Kurozu moromimatsu in a diethylnitrosamine-induced model of hepatocellular carcinoma. Thirty-two F344 rats were divided into two groups; the control group received basal CE-2 diet, and the Kurozu moromimatsu group received CE-2 diet containing Kurozu moromimatsu. At 16 weeks after initial intraperitoneal administration of diethylnitrosamine (150 mg/kg/w… Show more

“…Differences in the mortality rate with other studies could possibly be explained by either the used dosage of DEN or duration of the study [ 30 ]. Unfortunately, there were no comparable data about mortality rate of T. polium in a cancer study; however, the mortality rate of both control and treated groups was rational and similar to other studies [ 31 ]. The relationship between HCC and body weight is still not clear and there are many different views on this issue.…”

“…However, the addition of 2% Kurosu “moromimatsu” powder (the insoluble sediment that remains after the KuV fermentation, which is rich in dietary fiber and peptides) prolonged the lifespan of cancer cell-transplanted mice, inhibited tumor progression, and reduced nitrotyrosine production and activation of matrix metalloproteinases (MMP), but did not induce apoptosis [ 128 ]. In a similar study, the addition of Kurosu moromimatsu (2%) in the diet of diethylnitrosamine-induced hepatocellular carcinoma rats, prolonged their survival and inhibited the growth of cancer [ 129 ]. The effects of incorporating an ethyl acetate KuV extract in drinking water on the development of azoxymethane-induced colon carcinogenesis, were investigated in a rat model by Shimoji et al [ 53 ].…”

“…Shizuma et al (8) found that vinegar had anti-colitis and anti-oxidation effects in dextran sulfate sodium-induced mice models and speculated that its amino acids and oligopeptides, and other organic substances, might be biologically active. It was also found that Kurozu Moromi could inhibit the growth of hepatoma cells and prolong the survival time of hepatoma mice (9). However, the research on its material basis and mechanism of liver protection is still insufficient.…”
