Summary The history and application of the name chia and its scientific equivalent, Salvia hispanica, are outlined. The relationship of S. hispanica with other species known as chia is discussed including those within the genus Salvia and those without. Its native distribution and habitat are described. Chia was an important crop in Aztec society and the seeds had a wide range of uses beyond their use as a food grain. Following the Spanish conquest of Mexico, cultivation and use both declined but in recent years there has been a striking reawakening of interest in chia as a superfood with many benefits for the consumer. Contemporary as well as traditional uses are described with notes on its culinary uses and its health benefits. Propagation is by seed and its cultivation is discussed and attention drawn to new varieties more suitable for temperate climates.

Expansive learning is a teaching–learning method adopted by the Department of Architecture of Universidad de las Américas Puebla, Mexico, to introduce architectural students to the field of landscape sensitizing. This approach has been especially valuable considering the particular cultural and natural values of the Mexican landscapes. In it, architectural students are introduced to co-configuration strategies along with co-working methods with the participation of specialists and local stakeholders and community on the “barefoot” bottom-up basis. The community of Tochimilco, Puebla, was selected as a case study through which students can learn how vulnerable rural landscapes and their natural environments can be protected, constructed, and developed. Therefore, studying natural landscape and environmental conditions of Tochimilco through data collection, fieldwork and student workshops was carried out to reinforce the understanding of landscape features, values, semiotics, and meanings in a Socio-Ecological System of landscape (SES) framework. In this context, the expansive learning processes revealed the potentiality of architectural students to become environmental facilitators for future design and planning projects to trigger sensitizing and comprehensive approaches. In these terms, architectural education prepares students to recognize and be aware of natural values, landscape narratives and the “barefoot” relationship between the landscape and the human being occupying and cultivating it.

La chía es un recurso muy valioso ya que es la principal fuente de ácidos grasos insaturados, principalmente α-linolénico, además de proteína y fibra. En esta investigación se realizaron siete colectas en siete localidades para su estudio y comparación. Se midió tamaño de semilla, peso de mil semillas, peso volumétrico, color, porcentaje de germinación y extracción de aceite para análisis en cromatografía. La colecta de chía cultivada de Guanajuato presentó mayor variabilidad en tamaño de semilla y la de Roque la menor. Las colectas silvestres tuvieron el menor tamaño de semilla. La cultivada de Guanajuato tiene el peso mayor en semilla y las silvestres el menor, estas últimas no germinaron, pero sí lo hicieron las domesticadas. No hubo diferencias en peso volumétrico; sin embargo, si hubo diferencias en los cromatogramas (HPLC) y en las características físicas y variación de color en las domesticadas, incluidas semillas de color blanco. Esta investigación prospectiva muestra que la variabilidad presente en la chía silvestre y cultivada puede ser aprovechada para el fitomejoramiento.
