A farinha de folhas de mandioca apresenta relativamente, elevados teores de proteínas porém, sua digestibilidade é baixa. Isso poderia ser atribuído, parcialmente, ao seu teor em fibras [20]. Em ensaio biológico com ratos realizado por VILAS-BÔAS [28] empregando dietas contendo a parte aérea de mandioca como fonte de fibras, nas proporções de 5, 10 e 15% de fibras, foi concluído que ratos alimentados com as dietas contendo fibras apresentaram crescimento menor e diminuição da eficiência alimentar em relação ao grupo controle. Houve também diminuição da digestibilidade protéica in vivo, sendo inversamente proporcional aos níveis de fibras da dieta.Além das fibras, outros componentes químicos podem ter efeito prejudicial sobre o aproveitamento protéico. Os polifenóis, por exemplo, reduzem a digestibilidade e a disponibilidade de aminoácidos, como a lisina, em que seu grupo ε-amino torna-se indisponível [16,23]. A presença de polifenóis (taninos) influencia também negativamente a disponibilidade de metionina [19] e, além disso, agrava a deficiência inerente de aminoá-cidos sulfurados das folhas de mandioca. A metionina além de doadora de grupos metil [11] é fonte de enxofre para a detoxificação de cianeto [20].Neste trabalho empregaram-se três solventes para remover os polifenóis da farinha de folhas de mandioca, objetivando-se melhoria na digestibilidade da proteína. Nutrientes e antinutrientes foram analisados nas farinhas, antes e após a remoção dos polifenóis. -MATERIAL E MÉTODOS -Coleta e preparo da amostraAs folhas maduras e frescas de mandioca (Manihot RESUMOA farinha de folhas de mandioca apresenta baixa digestibilidade, mesmo possuindo um teor relativamente elevado em proteínas, principalmente, devido à presença de substâncias como os polifenóis. Visando melhorar o aproveitamento protéico desta farinha, empregaram-se três solventes (água, etanol 50mL/100mL e hidróxido de amônio 1mol/L) para remover os polifenóis. Folhas maduras de mandioca foram coletadas na fase vegetativa, em três repetições, colocadas em bandejas de papel e secas à sombra sobre bancadas de madeira, em recinto fechado e arejado, em temperatura ambiente. Após secagem, retiraram-se os pecíolos e as folhas foram moídas e passadas em peneira de 40mesh. A farinha foi submetida, antes e após a remoção dos polifenóis, às análises de umidade, fibra detergente neutra (FDN), fibra detergente ácida (FDA), açúcares totais, proteína bruta, vitamina C total, β-caroteno, cianeto, inibidor de tripsina, polifenóis e digestibilidade protéica in vitro. Após remoção dos polifenóis, houve diminuição dos teores de açúcares totais, vitamina C total, inibidor de tripsina e polifenóis e aumento de FDN, FDA, proteína bruta, β-caroteno e digestibilidade protéica in vitro. Dos solventes empregados para remover polifenóis, o hidróxido de amônio foi o mais eficaz, com índice de remoção de 94%, seguido pelo etanol (83%) e água (65%). A digestibilidade da proteína in vitro aumentou em 74%, quando o solvente empregado na remoção dos polifenóis foi o hidróxido de amônio...

Ileal digestibility in growing pigs fed starch-based diets with inclusion of four tropical leaves in a meal form was studied in a 5 3 5 Latin square design. Five diets were formulated with only casein as protein source in the basal diet (CAS), and casein plus dry cassava (CA) leaves, casein plus dry sweet potato (SP) leaves, casein plus dry cocoyam (CO) leaves and casein plus erythrina (ER) leaves in the other four diets. All diets contained the same amount of CP (14%), either provided by only CAS or a combination of casein and 250 g of leaf meal per kg of diet in the other diets. Leaves were separated manually from stems, and only the leaf part was used. A protein-free diet was fed during a sixth period in order to estimate the endogenous protein losses and calculate the CP-and amino-acid (AA)-standardized ileal digestibility (SID) values. The values for the foliages were calculated according to the difference method, assuming no interaction between the foliage and the casein. The ileal tract apparent digestibility of CP, organic matter and energy was higher in diet CAS than in the other diets (P , 0.05). The SID of CP and AA was close to 0.950 for casein, whereas the SID of AA was markedly lower in the foliages; the SID of indispensable and dispensable AA was highest in CO (0.500 and 0.352) and lowest in ER (0.170 and 0.195); intermediate values were obtained for SPs (0.367 and 0.349) and CA (0.232 and 0.242) leaves. Accordingly, the SID of lysine was highest (0.538) for CO leaves and lowest (0.126) in ER leaves; intermediate values were measured for CA and SP leaves. These low SID values in foliage meals must be related to the high levels of dietary fibre and the presence of secondary metabolites (tannins). These results suggest that it is only possible to replace a fraction of the conventional protein sources such as soyabean meal by tropical foliages in growing pig diets with a preference for CO leaves.

A fermentation procedure to increase the protein content of cassava root meal (CRM) with Trichoderma harzianum is described. The organism was grown in a 4 % CRM medium with inorganic nitrogen. The fungal biomass plus the rest of CRM were collected by filtration at the end of fermentation. Satisfactory results were obtained at 23°C (pH 4.0-4.2) and a fermentation time of 60 h. The CRM/biomass contained about 38 % crude protein (CP) on a dry matter basis. This should be compared with 2.4% CP in the untreated CRM. The sum of amino acids in the product corresponded to about 60% of the CP value. The estimated efficiency of conversion of the CRM into CRM/biomass was found to be about 30%. A substantial improvement in the protein content and quality of CRM can be made through submerged cultivation of T. harzianum on CRM.
