Pro‐ und Antioxydantien auf dem Fettgebiet XVIII: Die Wirkung von Eisenporphyrin‐Verbindungen auf die Autoxydation von Polyenen III

Abstract

Es wurde der EinfluD von Anti-und Prooxydantien auf die Inversion der katalytischen Wirkung von Hamoglobin und Cytodrorn c bei der Autoxydation von Linolsaure in phosphatgepufferter waiDriger Emulsion untersucht. Durch den Zusatz eines Antioxydans (Thyrnol, a-Tocopherol) oder eines zweiten invertablen Prooxydans (Fe-o-Phenanthrolin) kann die ,,kritische Katalysator-Konzentration", bei der die Wirkungsinversion eintritt, herabgesetzt werden.Pro-and Antioxidants in the Field of Fats XVIII: The Effect of Iron-porphyrin-compounds on the Autoxidation of Polyenes 111The influence of anti-and prooxidants on the inversion of the catalytic effect of hemoglobin and cytodrorne c in the autoxidation of linoleic acid in aqueous phosphate buffer medium was investigated.
