Prebiotic effects of olive pomace powders in the gut: In vitro evaluation of the inhibition of adhesion of pathogens, prebiotic and antioxidant effects

Abstract: Olive pomace is a biowaste rich in polyphenols and insoluble dietary fibre with high potential to develop new value chains towards a sustainable and circular bioeconomy. Regarding gut health, olive pomace phenolics and insoluble dietary fibre (after possible fermentation) could act as antioxidants, antimicrobial and prebiotic agents. These potential beneficial effects on the gut were analysed for two powders from olive pomace: liquid-enriched powder (LOPP)-mostly source of phenolics-and pulp-enriched powder (P… Show more

“…Homovanillic acid and hydroxytyrosol derivates, involved in oxidative LDL-cholesterol reduction, were detected in blood [36]. These findings were in agreement with those reported by Ribeiro et al [39], who confirmed the prebiotic activity of OP-added formulations subjected to simulated gastrointestinal digestion followed by in vitro fecal fermentation. In particular, the formulation obtained from the liquid fraction induced a positive effect on the Prevotella spp./Bacteroides spp.…”

“…The fraction was rich in flavonoids such as gallocatechin, which was biotransformed by the gut microbiota to 3-hydroxybenzoic acid, and 4-hydroxyphenyl acetic acid. In another study, also related to pineapple compounds, performed on flours obtained from the pineapple stems and peels, a high content of phenolic compounds was identified [ 151 , 152 ].…”

“…showed that olive pomace powders with prebiotic properties not only promote the production of SCFAs by microbiota but also exhibit anti-oxidant anti-adhesive activities against pathogens. They demonstrated that pulp-enriched powder, as the primary source of insoluble dietary fiber, inhibited the adhesion of B. cereus and L. monocytogenes up to 22% and 20%, respectively [ 126 ]. In another study, Leong et al investigated the prebiotic properties of oligosaccharides in goats’ milk-based infant formulas and their mechanisms of action.…”
