“…The antioxidant effect of extracts on DPPH free radical scavenging may be due to their hydrogendonating capability, which decreases the stable olive leaf extract DPPH radical to the yellow DPPH-H. Antioxidants can capture the free radical chain of oxidation and form stable free radicals, avoiding further oxidation propagation (Xie et al, 2015).
