Oxidonitrergic and antioxidant effects of a low molecular weight peptide fraction from hardened bean (Phaseolus vulgaris) on endothelium

Abstract: About 3000 tons of beans are not used in human food due to hardening. Several studies on bean-derived bioactive peptides have shown potential to treat some diseases, including those relying on oxidative dysfunctions. “…It is known that the nutritional quality of proteins from common beans can be affected depending on the postharvest conditions, being observed that storage in temperatures higher than 35 °C and moisture above 60% leads to the development of the hardening phenomenon, commonly known as hard-to-cook (HTC) effect ( Batista and Fernandes, 2016 , Siqueira et al, 2016 ). It is estimated that 3 million tons of beans per year are no longer used in human nutrition due to the hardening ( Graziani, et al, 2021 ). Furthermore, the PV3, obtained from a product of low commercial value, was able to induce nitric oxide (NO) release and vasorelaxation without causing cell death and was capable of protecting endothelial cells from hydrogen peroxide-induced oxidative stress death ( 4 ).
