Estudos populacionais indicam que o consumo de alimentos ultraprocessados é extremamente alto em muitos países. Esses alimentos são frequentemente ricos em gorduras saturadas e hidrogenadas, açúcares e sal e pobres em aminoácidos essenciais, fibras e a maioria dos micronutrientes. Esse padrão alimentar contribui para o ganho excessivo de peso, inflamação e uma série de doenças crônicas. Nos últimos anos, as redes sociais facilitaram o acesso à informação sobre nutrição. Mesmo assim, a adesão à alimentação saudável continua sendo um dos principais desafios para nutricionistas. O presente artigo revisa modelos teóricos importantes na clínica e na pesquisa sobre mudança de comportamento. Teorias fornecem um mapa para que o nutricionista possa estudar problemas e desenvolver intervenções mais apropriadas, com maior chance de sucesso.
