Occurrence and Characterization of Aeromonas Species in Pasteurized Milk and White Cheese in Rio De Janeiro, Brazil

Abstract: A total of 35 samples (1000 ml each) of pasteurized milk and 25 samples (100 g each) of white cheese purchased at supermarkets in Rio de Janeiro were analyzed for the presence of Aeromonas. Strains of Aeromonas were isolated from 28.5% of pasteurized milk and 32% of white cheese samples. Standard Plate counts in the pasteurized milk samples ranged from 7.2 × 10* to 2.5 × 105 CFU/ml. Total and fecal coliform counts in white cheese samples ranged from 1.9 × 10* to 2.4 × 105 most probable number per g and 3.2 × 1… Show more

“…A presença de A. hydrophila, na cadeia de leite e seus derivados, vem sendo documentada (CARNEIRO; ROSSI Jr., 2006;FREITAS et al, 1993). Bulhões e Rossi Junior (2002), ao estudar a prevalência deste microrganismo no queijo-de-minas frescal artesanal, detectaram a sua presença em 51,2% amostras (82/160), em quantidades que variaram entre 5,0 × 10 3 e 4,0 × 10 5 UFC.g -1 .…”

“…This soft, white cheese is made of pasteurized or raw milk. It is characterized by a high water content (43.0%) and low pH (5.1-5.6) (Freitas et al, 1993). Microbiological standards for soft cheese inspection are determined by the Brazilian National Public Health Agency (Portaria…, 1997).…”

“…Aeromonas genus is considered an emerging pathogen (26,27) and responsible for gastrointestinal disturbances (19), septicemia, endocarditis, conjunctivitis and wound infections (8,9,13,16,18). These organisms are largely distributed in several water sources such as rivers, lakes, wells, sewage, wastewaters and drinking water supplies (19,24).…”
