“…The viability of the probiotic in food products is dependent on the strain and is affected by associated microorganisms, culture conditions, food composition, processing, final pH, dissolved oxygen, and storage temperature. Regarding the survival of Lactobacillus, the most important limiting factors are low pH, low temperatures, and the presence of organic acids (Martins et al, 2022).
