Neosartorya glabra polygalacturonase produced from fruit peels as inducers has the potential for application in passion fruit and apple juices

Abstract: SummaryPolygalacturonases are enzymes with the biotechnological potential for use in fruit juice clarification and for the enhancement of filtration efficiency. The aim of this work was to assess the production of polygalacturonase by the fungus Neosartorya glabra by means of solid-state and submerged fermentation using fruit peel residues as the carbon source, and also apply the enzyme in the clarification and decrease in viscosity of passion fruit and apple juices. The highest polygalacturonase (4.52 U/g/h) … Show more

“…Pectinase (E.C.3.2.1.15) represents a complex enzymatic system which hydrolyses the glycosidic linkage present in pectic substances resulting in the formation of monogalacturonic acid (PINHEIRO et al, 2017). Pectic substances are the high molecular weight glycosidic macromolecule contained a backbone of α-1, 4-linked Dgalacturonic acid residues which consist of carboxyl group at C-6.…”

“…Pectinase enzyme (EC. 3.2.1.15) is ranked as one of the highly important industrial enzymes that find its application in juice and beverage processing, vegetable oil extraction and other food industries (Pinheiro et al 2017). Hoa and Hung (2013) reported the ability of A. oryzae to produce cellulase and pectinase on soybean residue.…”
