Le sucre en Espagne (711-1610)

Abstract: This paper reviews preserved documents referring to the cultivation of sugar cane (geographical locations) and to the extraction and refining process for cane (pressing, boiling, crystallizing) in Spain (711-1610). An analysis is made of the various kinds of cane sugars and honeys known of, as well as of the connections between the Sicilian and Spanish industries, with a special attention to technical lexicon.
