Cranberries have known anti-inflammatory properties, which extend their benefits in the context of several chronic diseases. These benefits highly rely on the polyphenol profile of cranberries, one of few foods rich in A-type proanthocyanidin (PAC). A-type PAC comprises flavan-3-ol subunits with an additional interflavan ether bond in the conformational structure of the molecule, separating them from the more commonly found B-type PAC. PACs with a degree of polymerization higher than three are known to reach the colon intact, where they can be catabolyzed by the gut microbiota and biotransformed into lower molecular weight organic acids that are available for host absorption. Gut microbiota-derived metabolites have garnered much attention in the past decade as mediators of the health effects of parent compounds. Though, the mechanisms underlying this phenomenon remain underexplored. In this review, we highlight emerging evidence that postulates that polyphenols, including ones derived from cranberries, and their metabolites could exert anti-inflammatory effects by modulating host microRNAs. Our review first describes the chemical structure of cranberry PACs and a pathway for how they are biotransformed by the gut microbiota. We then provide a brief overview of the benefits of microbial metabolites of cranberry in the intestinal tract, at homeostasis and in inflammatory conditions. Finally, we discuss the role of microRNAs in intestinal health and in response to cranberry PAC and how they could be used as targets for the maintenance of intestinal homeostasis. Most of this research is pre-clinical and we recognize that conducting clinical trials in this context has been hampered by the lack of reliable biomarkers. Our review discusses the use of miRNA as biomarkers in this context.

Cardiovascular disease is the leading cause of human mortality and morbidity worldwide. Atherosclerosis (AS) is the underlying pathological responsible in most acute and severe cardiovascular diseases including myocardial infarction and stroke. However, current drugs applied to the treatment of AS are not clinically effective, and there is a large residual risk of cardiovascular disease and multiple side effects. Increasing evidence supports a close relationship between microorganisms and the incidence of AS. Recent data have shown that probiotics can improve multiple key factors involved in the development and progression of AS, including cholesterol metabolism imbalance, endothelial dysfunction, proinflammatory factor production, macrophage polarization, intestinal flora disturbance, and infection with pathogenic microorganisms, and therefore probiotics have attracted great interest as a novel potential “medicine”. This review is aimed at summarizing the effects of probiotics on various influencing factors, and providing valuable insights in the search for early prevention and potential therapeutic strategies for AS.

Необходимость разработки и производства ферментированных фруктовых соков вызвана повышенным спросом потребителей в связи с увеличением случаев непереносимости лактозы и растущей популярностью таких пищевых тенденций, как веганство. Цель работы -краткий обзор последних результатов исследований, касающихся применения L. plantarum для ферментации фруктовых соков. Анализ зарубежных научных публикаций свидетельствует о том, что многие фруктовые соки были исследованы и оценены на предмет их пригодности в качестве источника сырья для молочнокислого брожения. Используемые в этих целях молочнокислые бактерии (LAB) изучались и оценивались по результатам сбраживания различных фруктовых соков. Особый интерес представляют LAB Lactiplantibacillus (Lpb.) L. plantarum, поскольку они обладают пластичностью генома, а также высокой универсальностью и гибкостью, что необходимо эффективно использовать для ферментации фруктовых соков. Фруктовые соки являются подходящими субстратами для молочнокислого брожения. Ферментация фруктовых соков дает возможность получать напитки без лактозы, со специфическим вкусом, пониженным содержанием сахара и содержанием полезных биологически активных соединений, которые могут быть профилактическим средством в борьбе с метаболическими заболеваниями. L. plantarum обладает широким набором ферментов, способствующих образованию многих биоактивных соединений, бактериоционов и EPS, которые обладают антимикробными, антиоксидантными и пробиотическими свойствами. Применение пробиотических штаммов L. plantarum, для ферментации фруктовых соков позволяет создавать пищевые продукты с увеличенным сроком хранения, повышенной пищевой ценностью и улучшенными органолептическими показателями.
