Heavy metals are toxic elements that have contaminated agricultural waters and soils due to their use in anthropic activities, generating bioaccumulation in food and biomagnification in the food chain. In this research, information was collected on the presence of heavy metals in different foods of plant origin in Ecuador, the first link in the trophic chain, to establish a baseline in the field of food toxicology. Information was extracted from the central databases, scientific journals and libraries' digital repositories, analyzing data on Cd, Hg, Pb and the metalloid As in 15 plants. According to the Mercosur standard, 14 exceeded the maximum permissible limit (LMP) of As, distinguishing the avocado (19.76 ± 1.36 mg/kg As). According to the Codex Alimentarius, 31% of the vegetables exceeded the LMP in terms of Cd; carrots (9.71 ± 8.66 mg/kg Cd) were the most contaminated. Mercury (Hg) was studied only in potatoes (0.04 mg/kg Hg), which was found to exceed the standard four times, while Pb surpassed the limits in 33% of the samples analyzed, sugarcane the vegetable with the highest concentrations of 4.32 mg/kg Pb. In conclusion, multi-metal contamination was evidenced in some vegetables, representing a risk to consumers' health and food safety. La presente investigación se centra en analizar la conveniencia de implementar una casa comercializadora de artículos ortopédicos en la provincia de Cañar y la aceptación que tendría la misma. Con relación a su orientación metodológica su diseño fue exploratorio y descriptivo, a su vez transversal, no experimental, no probabilístico y con un enfoque cuantitativo, además se basó en la revisión sistemática de la literatura haciendo uso de las bases de datos científicas. Para la recopilación de datos se aplicó la técnica la encuesta y como instrumento el cuestionario, a una muestra de la Población Económicamente Activa (PEA) de Cañar, mediante el cual se observó que la empresa comercializadora de artículos ortopédicos es viable teniendo mayor aceptación en la ciudad de Azogues. Así también se propone el método de reconocer, oportunidad, tecnología, alianza y verificar (ROTAV) que aporta con fases a considerar en una idea de negocio, ofreciendo pautas a los empresarios o emprendedores mismo que ayudarán a potenciar el bien o servicio.
The present describes the results of the first two phases of the investigation that were proposed in order to provide a solution to the DiTotinos restaurant located in the municipality of Moroleón in the state of Guanajuato. The main problem to be treated is the way in which the activity of reporting products available in the warehouse was carried out, as well as following up on the face-to-face and / or telephone orders, which were registered manually, which is why the development of the software tool System Administration of Orders and Inventory DiTOTINOS (SAO-DiTOTINOS) was suggested. This software will have the function of controlling the entries and exits of the products of the inventory and administer the orders, for which the following methodology was applied: phase I, Development of software tools (using sequential linear development methodology), phase II, Implement the software tool. With this, the direct beneficiary is the restaurant company DiTotinos, mainly the order and inventory area.
