“…The average L* values and the ultimate pH obtained (52.85 ± 0.3 and 5.87 ± 0.05, respectively) were out of the range for red, firm and non-exudative pork and could be considered in the range of pale, soft and exudative pork (Warner (Trefan et al 2013). In the same way as in the current work, the muscle area, fat thickness, ultimate pH, Color L* and Color b* of Meishan pigs fed diets containing SP roots were not different from those from pigs fed a corn soybean-based diet according to Mino et al (2013).
