Effects of Soaking pH and Extracting Temperature on the Physicochemical Properties of Chicken Skin Gelatin

Abstract: This study was conducted to evaluate the effects of soaking pH and extraction temperature on the physicochemical properties of chicken skin gelatin. In order to extract gelatin from chicken skin, the chicken skin was soaked at various pH ranges (1-13) and was extracted at 75 and 100 o C. For the rate of weight increase, the highest value was obtained from two pH ranges (1-2 and 12-13). In addition, the rate of weight increase was affected by soaking time. The alkali treatments had greater crude protein content… Show more

“…The pretreated hides were soaked in distilled water (1:4 w/v) at 65°C (Memmert WNB7-45 type water bath) for 5 h, followed by further soaking at 70°C for 5 h in preparation for the second extraction step. The extracted gelatin was sieved (< 200 mesh) and dried in a cabinet drier at 50-55°C for 48 h until the moisture less than 12% ( Mulyani et al , 2017 ), and the yield was calculated using the following formula ( Kim et al , 2012 ; Ktari et al , 2014 ):…”

“…Our second objective was to elaborate a biodegradable film using collagen, however following the extraction process (alkali then acid process), the collagen molecule loses its strong mechanical strength compared to the native form [ 30 ]. To overcome such issue, we blended collagen with another natural polymer such as chitosan derived from chitin known as the second most abundant polysaccharide after cellulose.…”

“…Kekuatan gel dari gelatin berpengaruh pada aplikasinya pada produk 17 . Perbedaan kondisi ekstraksi akan berpengaruh pada karakteristik gel gelatin 18 . Kekuatan gel sangat tergantung pada ikatan hidrogen antara molekul air dengan kelompok hidroksil bebas dari asam amino, ukuran rantai protein, konsentrasi serta distribusi berat molekul 19,20,21 .…”
