“…The main goal of the meat industries is to provide meat and meat products with excellent sensory properties, such as flavor and aroma, for prolonged storage periods at the lowest possible cost (Garrine et al, 2021). When huge volumes of meat began to be exported long distances (e.g., from Australia to the UK), scientific interest in meat microbiology surged, and this trend continued in the 1950s with the advent of supermarkets.…”

“…According to current research, these compounds cause a multifactorial phenomenon known as endogenous intoxication (;Gerasimov et al, 1998; Danyer et al, 2021).In small ruminants, there is still some research on oxidative stress(Zaitsev et al, 2020a). Malondialdehyde is one of the lipid peroxidation products detected by TBARS(Zaitsev et al, 2020b;CMLP et al, 2021). The level of TBARS in Karachai goats' blood was 4.27 M/L, which was considerably higher (p ≤ 0.01) than in Nubian goats (2.75 M/L); this result agrees with that of Al-Hassan et al, 2016 who studied with Aaradi goats.…”
