Effectiveness of rutin and its lipophilic ester in improving oxidative stability of sardine oil containing trace water

Abstract: Summary Poor oxidative stability exhibited by n‐3 polyunsaturated fatty acid rich sardine oil is a major challenge for its utilisation in industry.
