Effect of germination and elicitation on phenolic composition and bioactivity of kidney beans

Abstract: Ready-to-eat sprouts are becoming popular healthy fresh foods. Germination and elicitation may be used to improve phytochemical and functional quality of sprouts. The aim of this study was to unveil the efficacy of germination and the use of elicitors (500 µM ascorbic, 50 µM folic and 5 mM glutamic acid) to enhance the phenolic composition and antioxidant and angiotensin I converting enzyme (ACE) inhibitory activities of 8 day-old Phaseolus vulgaris L. var. Pinto sprouts. Sprouting produced a general decrease … Show more

“…Anthocyanins are normally present as glycosides in plants, and anthocyanin-flavanol derivatives found in pomegranate juice are also glycosides [22]. Cyanidin-3-O-glucoside, pelargonidin-3-O-glucoside, and malvidin derivate were also detected in kidney bean seeds [23]. We could not find anthocyanin in the other two common beans by HPLC-PDA/MS.…”

“…There are some studies reporting that germination is an efficient process to increase the TPC of beans (Randhir et al 2004;Fernandz-Orozco et al 2006;Fernandz-Orozco et al 2008;DueÑas et al 2015). The changes of TPC are presented in Figure 3D.…”

“…It can be hypothesized that glutamic acid could participate in the formation of some antioxidant compounds to maintain a balance of the redox homeostasis during germination. Additionally, glutamic acid might change the phenolic composition in sprouted lentils, increasing the content of those compounds with higher radical scavenging activity, as it has been previously showed in kidney beans [34].…”
