Effect of Coating Parsley Roots (Petroselinum Hortense) With Chitosan Film on Selected Characteristics Thereof During Storage

Abstract: S t r e s z c z e n i e W czasie produkcji, a następnie przechowywania, w warzywach o małym stopniu przetworzenia zachodzą procesy chemiczne i biochemiczne obniżające ich jakość. Starzenie się warzyw podczas długo-trwałego przechowywania polega na obniżeniu aktywności fizjologicznej i zdolności przystosowania do niesprzyjających warunków otoczenia.
