Diet and Gene Expression: Delta-5 and Delta-6 Desaturases in Healthy Chinese and European Subjects

Abstract: Aim: To compare the composition of fatty acids (FAs) in diet, and the expression of delta-6 desaturase (D6D) and delta-5 desaturase (D5D) genes in peripheral blood mononuclear cells (PBMCs) between Chinese and Europeans. In another study comparing the composition of FA in the diet of healthy Chinese and European subjects, Xiang et al reported that the expression of D5D and D6D in peripheral blood mononuclear cells (PBMC) correlated with the amount and type of dietary fat consumed (21). These results suggested that measurement of desaturase mRNA expression in a peripheral blood sample might possibly serve as a marker of FA status.…”
