Baumann and Steenbock (21a) investigated the stabilizing action of various oils on /3-carotene and found that after storage for 5 months in the dark at 4°C., the amount of carotene which disappeared was as follows: refined cottonseed oil, 8 per cent; sesame oil, 15 per cent; coconut oil, 25 per cent; olive oil, 38 per cent; corn oil, 45 per cent; crude wheat germ oil, 62 per cent.…”
