Abstract:Introdução: O feijão é uma leguminosa pertencente à família Leguminosae e sub-família Papipilionoideae, é um excelente alimento, fornecendo nutrientes importantes para o organismo humano, como proteínas, minerais, vitaminas, carboidratos e fibras.
