The physico-chemical properties of honey produced by the stingless bee Melipona mondury from Atlantic Forest in the state of Bahia, northeastern Brazil were evaluated. The evaluated characteristics included: water content, electrical conductivity, pH, acidity, water activity, ashes, diastase, hydroxymethylfurfural (HMF), reducing sugars and saccharose values. The honey samples showed mean values of 29.18% for moisture; 391.5 μS for electrical conductivity; pH of 4.06; 34.3 meq kg -1 for acidity; 0.73 for water activity; 0.18% for ashes; 4.05 (Goethe unit) for diastase; 1.60% for HMF; 65.42% for reducing sugars; and 2.14% of saccharose. Only the diastase activity was above the limits accepted by the Technical Regulation for Identity and Quality of Honey (Brazilian Ministry of Agriculture and Supplies). Most parameters are according to those reported in honeys from other species of stingless bees in Brazil.

R E S U M OO mel é uma solução sobressaturada de açúcares. Trata-se de uma substância de origem animal que é produzida por abelhas melíferas a partir do néctar de flores. O presente estudo teve por objetivo avaliar a qualidade dos méis de abelhas africanizadas (Apis mellifera) e Jataí (Tetragonisca angustula) e verificar a presença de sujidades e adulterações, além de fazer uma breve comparação entre os dois tipos de méis. Para isso doze amostras de méis (seis de abelha Jataí e seis de abelhas Africanizadas) foram adquiridas do comércio na microrregião de Francisco Beltrão -PR. As amostras foram submetidas às avaliações dos parâmetros físico-químicos, avaliações de adulteração, de sujidades e matérias estranhas. Os resultados físico-químicos comprovaram diferenças para os parâmetros de humidade, cinzas e HMF para os méis de abelhas Jataí e Africanizadas. As análises para verificação de adulteração revelaram resultados negativos para o aquecimento, armazenamento prolongado, adição de amido e dextrinas em ambos os tipos de méis, indicando boa qualidade dos produtos consumidos pela população. It is a substance of animal origin, produced by honeybees from the nectar of flowers. This study aimed to evaluate the quality of the honeys of Africanized bees (Apis mellifera) and Jataí (Tetragonisca angustula) and check for dirt and tampering, in addition to a brief comparison between the two types of honey.For this, twelve honey samples (six each from Jataí and from Africanized bees) were collected in of Francisco Beltrão -PR micro-region. The samples were subjected to assessments of the physical and chemical parameters, tampering, dirt and foreign matterassessments. The physicochemical results showed differences in the parameters of moisture, ash and HMF between the Jataí and Africanized bees honeys. Analyses for tampering verification revealed negative results for heating, prolonged storage, the addition of starch and dextrins in both types of honey, indicating a good quality of the product consumed by the population.

RESUMO -A composição do mel de abelha nativa é pouco conhecida, embora a análise das suas propriedades físico-químicas esteja associada com os méis de abelhas africanas. O objetivo desse trabalho foi realizar análises físico-químicas, determinar o teor de fenólicos e flavonoides totais e a atividade antioxidante de 10 méis de meliponíneos (8 de Scaptotrigona sp. e 2 de Tetragonisca angustula) e compará-los a 10 méis de laranja (Apis mellifera). Verificou-se que os méis de A. mellifera apresentaram menor teor de fenólicos totais em comparação aos méis de meliponíneos, enquanto o teor em flavonoides foi levemente superior para os méis de abelha africanizada. Os méis de meliponíneos apresentaram os melhores resultados para atividade antioxidante in vitro. Os resultados de teor de proteína, cor, acidez livre e umidade, quando investigados através da análise multivariada (PCA e Cluster), permitiu a discriminar entre as diferentes espécies de abelhas.Palavras-Chave: análises físico-químicas; atividade antioxidante; abelhas sem ferrão.ABSTRACT -Honeys from stingless bees have several characteristics that set them apart from the honey from Apis mellifera. Native bee honey composition is not very well known, but the analysis of their physicochemical properties has been associated with the African honey bees. In this study, we carried out physicochemical analysis, determination of phenolics and total flavonoids, and antioxidant activities of 10 mellipone honeys (8 from Scaptotrigona sp. and 2 from Tetragonisca angustula) and 10 orange honeys (Apis mellifera) in order to compare honeys from different bee species and different regions. Honeys from A. mellifera had lower total phenolic content compared to the honey of stingless bees, while the flavonoid content was slightly higher for the africanized honey bee. Honey of stingless bees showed better results for antioxidant activity in vitro. Results for protein content, color, free acidity and moisture, when investigated through multivariate analysis (PCA and Cluster), allowed to discriminate between the different bee species.
