This study aimed to reveal the mechanisms underlying the interaction between condensed tannins (CTs) and bile salts. The interaction mechanism was analyzed by transmission electron microscopy, exposure to various physicochemical conditions, electrophoresis, fluorescence spectroscopy, isothermal titration calorimetry, and molecular modeling. A new complex was formed from CTs and bile salts. The complex showed a negative enthalpy change and a positive entropy change, demonstrating that the main thermodynamic driving force was both entropy and enthalpy and indicating that binding occurred through hydrogen bonds and hydrophobic interactions. The analysis of the effects of CTs on the stability and digestion properties of bile salt emulsions indicated that CTs were able to inhibit lipid digestion to an extent. Our findings may provide evidence that foods rich in CTs offer health benefits by aggregating with bile salts and reducing the absorption of fat.

Tannins are maximally available phytoconstituents in the plant kingdom, where they function as a protective and regulate plant growth. Different types of condensed tannins carry a huge potential as pharmaceutical agents as well as pharmaceutical aid. The tannins are important and efficacious chemicals for tanning, absorption of minerals, and precipitation of proteins. These are also used for the production of ink and adhesives. Presently, tannins are being considered as important nutritives. The solicitation of tannins as medicine is another new dimension. These paper frameworks are the general evidences about tannins, different condensed tannins, the other multiple benefits and utilization of tannins. The potential world supply of tannins is huge. Pharmaceutical procedures of tannins are successfully adopted. Applying tannins in the beverage industries including beer, fruit juice, or wine is more functional. Tannin-based foams, more developed phenolic type, is a fast-moving research field. A substantial amount of research is still continuing in this area and some trials, too.

Phytochemicals toward Green (Bio)sensing

Because of numerous inherent and unique characteristics of phytochemicals as bioactive compounds derived from plants, they have been widely used as one of the most interesting nature-based compounds in a myriad of fields. Moreover, a wide variety of phytochemicals offer a plethora of fascinating optical and electrochemical features that pave the way toward their development as optical and electrochemical (bio)sensors for clinical/ health diagnostics, environmental monitoring, food quality control, and bioimaging. In the current review, we highlight how phytochemicals have been tailored and used for a wide variety of optical and electrochemical (bio)sensing and bioimaging applications, after classifying and introducing them according to their chemical structures. Finally, the current challenges and future directions/perspective on the optical and electrochemical (bio)sensing applications of phytochemicals are discussed with the goal of further expanding their potential applications in (bio)sensing technology. Regarding the advantageous features of phytochemicals as highly promising and potential biomaterials, we envisage that many of the existing chemical-based (bio)sensors will be replaced by phytochemical-based ones in the near future.
