Bioactivation of Carbonated Mineral Water with Passion Fruit Microcapsules

Abstract: Abstract:The ionic gelation is a technique of microencapsulation by a reaction between a polymer solution and an ionic solution. This technique can protect the nutraceutical bioactive compounds.
