Abstract:The ionic gelation is a technique of microencapsulation by a reaction between a polymer solution and an ionic solution. This technique can protect the nutraceutical bioactive compounds. This study used the process of ionic gelation solution with sodium alginate in order to obtain a new product: a bioactive water from passion fruit microcapsules placed in the carbonated mineral water. The physical-chemical, microbiological stability, and migration of the bioactive compounds of microcapsule for water for 35 days at 5 ± 1 °C was verified. For the microcapsules, it was possible to verify that the levels of ascorbic acid and carotenoids decreased during the storage period, and phenols remained constant (p≤0,05). Microcapsules and water presented balance of the ascorbic acid, carotenoids and phenols levels (p≤0,05). This result indicates migration of the bioactive compounds of the microcapsule to water and consequently the bioactivation of carbonated mineral water.
A folhas da mangabeira são popularmente utilizadas no preparo de chás e infusões com fins medicinais. Infusões de ervas apresentam propriedades benéficas devido as substâncias bioativas que atuam como antioxidantes. Assim, o objetivo desse estudo foi avaliar as características físico-químicas e o conteúdo de compostos bioativos nutracêuticos e, verificar a influência do tempo em infusões de folhas de mangaba. As infusões foram preparadas em triplicada a 5 e 10 (I5 e I10) minutos, adicionando 1 g de material vegetal in natura em 50 mL de água fervente. Foram efetuadas análises para caracterização físico-química das folhas in natura, infusões e resíduos: cor e índice de escurecimento (I.E.); sólidos solúveis totais em ºBrix e; pH. As análises dos compostos bioativos foram: clorofilas, carotenóides e fenóis totais. Nas análises físico-químicas, o teor de sólidos solúveis totais não variou significativamente, indicando que os tempos analisados extraíram conteúdos similares. O I.E. permaneceu constante, indicando que o tratamento térmico não foi associado com a ativação enzimática e escurecimento. Entretanto, o tempo de infusão afetou significativamente os fitoquímicos. Os valores de clorofila total e suas frações variaram com diminuição progressiva em comparação da folha in natura em diferentes tempos de infusão, bem como os carotenóides totais, β-caroteno e fenóis, o que sugere influência do tempo na quantidade desses compostos presentes nas infusões, sendo que, a I5 proporcionou menor perda dos compostos comparado à I10, podendo correlacionar-se positivamente com a concentração de flavonóides e com a atividade antioxidante.
Resumo-Com base nas propriedades da água e no crescimento do seu consumo pela população, acoplado a liderança do Brasil na produção de maracujá e aos compostos bioativos do mesmo, o presente trabalho avaliou a vida de prateleira, por meio do estudo microbiológico, da água mineral bioativada com microcápsulas de maracujá e, analisou a microscopia das microcápsulas presentes na água no período de armazenamento. O CO 2 , proveniente da água gaseificada utilizada no presente estudo, ocasionou efeito bactericida por reduzir o pH da água. Esse fator aliado com a adição do citrato de sódio, a pasteurização do produto e ao armazenamento refrigerado apresentaram-se como barreiras múltiplas para o crescimento de microrganismos na água bioativa. Somente no 70º dia de armazenamento, a água bioativa apresentou crescimento de fungos, exibindo 2x10 UFC/g. Porém, não apresentou contaminação para os outros microrganismos analisados. O tempo de armazenamento não causou alterações microscópicas na superfície das microcápsulas, que se apresentam em forma de esferas regulares. Palavras-chave-Água bioativa, análise microbiológica, microencapsulação, microscopia.Abstract-Based on the properties of water and the growth of consumption by the population, coupled Brazil's leadership in the production of passion fruit and bioactive compounds thereof, the present study evaluated the shelf life, through microbiological analysis, of bioactive mineral water with passion fruit microcapsules and analyzed the microscopy of the microcapsules present in the water in the storage period. The CO 2 from the carbonated water used in this study caused bactericidal effect by reducing the pH of the water. This factor combined with the addition of sodium citrate, pasteurization of the product and refrigerated storage were multiple barriers to the growth of microorganisms in bioactive water. Only after 70 days of storage, the bioactive water grew yeast, displaying 2x10 UFC g. However, it showed no contamination to the other analyzed microorganisms. The storage time did not cause microscopic changes on the surface of the microcapsules, which are in the form of regular spheres.
