Aus dem Unilevci ForscliiciigslrrborotoiiiLni HambiiigDer Gehalt an freiem und gebundenem Glycerin in wasser-16slichen und/oder stark emulgierenden sowie in wasserunlosl i d e n Monoglyceriden wurde enzymatisch bestimmt. Die dabei gefundenen Werte werden mit den Ergebnissen chemischer Methoden verglichen; nur mit Hilfe der enzymatischen Glycerin-Bestimmung konnte in allen Proben freies Glycerin bestimmt werden. Eine gute Ubereinstimmung der nach beiden Methoden erhaltenen Werte wurde nur bei der Bestimmung des Gesamtglycerins in wasserunloslichen Monoglyceriden festgestellt. Die relativen Standardabweichungen der enzymatischen Glycerin-Bestimmung fur mehrere Monoglycerid-Einwaagen liegen zwischen 0.86 und 1.26°/o; der relative Streubereich xTel, fur eine statistische Sicherheit P von 95 o/o betragt 1.9 bis 2.8 O/a. Das Lambert-Beer'sche Gesetz ist in einem weiten Bereich erfullt.
Free and Total Glycerol Content of Monoglycerides and Mixtures of Partial Esters. A Comparison of the Enzymatic Glycerol Estimation with Chemical MethodsThe free and bound glycerol content of water-soluble and/or strongly emulsifying as well a s of water-insoluble monoglycerides was determined enzymatically. The values thus observed were compared with those obtained by chemical methods. Free glycerol could be determined in all the samples only with the help of the enzymatic method. A good agreement between the values obtained by the two methods was found only in the determination of total glycerol in water-insoluble monoglycerides. In the enzymatic procedure for glycerol determination, the relative standard deviation for various weighings lies between 0.86 and 1.26 O/O; taking P = 95 O/o, xrel. amounts to 1.9-2.80/0. Lambert-Beer's law is valid for a wide range.
