The level of petroleum ether insoluble oxidized fatty acids in used frying fats is one of the recommended criteria for assessing their quality in Germany; however, the method of determination is time consuming and inaccurate. Gel permeation chromatography (GPC) allows the determination of dimeric and oligomeric triglycerides in a heated fat irrespective of the presence of oxidized material. An indication of the total amount of polar and oxidized compounds can be obtained by liquid chromatography (LC) on a silica gel column in connection with a moving‐wire detector. A comparatively simple and quick method is the separation of polar and unpolar components in a used frying fat by means of column chromatography (CC) on silica gel. Over a large number of investigations, a good correlation was seen between the results obtained with GPC, LC, and CC and the amount of petroleum ether insoluble oxidized fatty acids isolated from used frying fats. Limits of the analytical data obtained by the new methods are proposed which indicate deterioration of used frying fats.
Von der Deutschen Gesellschaft für Fettwissenschaft wurde 1973 eine Empfehlung zur Beurteilung gebrauchter Fritierfette ausgesprochen, bei der dem Gehalt an petroläther‐unlöslichen oxidierten Fettsäuren besondere Bedeutung zukommt. Die Bestimmung ist jedoch zeitaufwendig. Außerdem werden definitionsgemäß nur geringe Anteile der gesamten oxidierten Fettsäuren erfaßt.
Die Ergebnisse anderer, weniger zeitaufwendiger Untersuchungsmethoden, die überdies ohne chemische Eingriffe direkt mit dem Fritierfett durchführbar sind, wurden mit denen der Methode „Petroläther‐unlösliche oxidierte Fettsäuren”︁ verglichen. Dazu wurden an Proben von 4 Fettsorten, die in Imbißbetrieben unter verschiedenen Bedingungen zum Fritieren verwendet worden waren, folgende Untersuchungen durchgeführt:

Säulenchromatographische Bestimmung (SC) der polaren Anteile
Liquidchromatographische Bestimmung (LC) der Summe derjenigen Substanzen, die polarer sind als unveränderte Triglyceride
Gelpermeationschromatographische Bestimmung (GPC) der polymeren Triglyceride.
Es zeigte sich, daß statistische Beziehungen zwischen 1. und 2. bzw. 3. bzw. 4. bestehen. Die Mittelwerte der Verteilungen liegen näherungsweise auf Parabeln. Es ist somit möglich, die in der DGF‐Empfehlung für den Gehalt an petroläther‐unlöslichen oxidierten Fettsäuren angegebenen Grenzwerte von 0.7 bzw. 1.0% durch entsprechende Werte der anderen Methoden zu ersetzen.
Die Bestimmung des Gehaltes an petroläther‐unlöslichen oxidierten Fettsäuren ist bei der Beurteilung von gebrauchten Fritierfetten von Bedeutung. Die in den DGF‐Einheitsmethoden unter C‐III 3 (68) beschriebene Bestimmung „Oxydierte Fettsäuren”︁ wird zur Zeit zur Untersuchung dieser Fette herangezogen. Sie wurde von der Fachgruppe „Analyse und Einheits‐methoden”︁ der Deutschen Gesellschaft für Fettwissenschaft e. V. als Methode C‐III 3 (77) „Petroläther‐unlösliche oxidierte Fettsäuren”︁ gründlich überarbeitet und durch Verzicht auf die Abtrennung des Unverseifbaren verkürzt. Beide Methoden — C‐III 3 (68) und C‐III 3 (77) — wurden im Ringversuch überprüft. Die statistische Auswertung der Ergebnisse zeigte bei beiden Methoden gleiche Wiederholbarkeiten, die Vergleichbarkeit ist bei Methode C‐III 3 (77) jedoch wesentlich besser als bei Methode C‐III 3 (68). In Zukunft soll daher die Methode C‐III 3 (77) angewandt werden.
Die unveranderten Triglyceride in gebrauchten Bratfetten werden von den starker polaren Produkten fliissigchromatogra-phis& abgetrennt. Die nichtfliidtigen Oxidations-, Polymerisations-und Hydrolyseprodukte, die beim Bratvorgang entstehen, werden na& der Elution der unveranderten Triglyceride durch ein stark polares Losungsmittel von der Saule verdrangt und die Saule unmittelbar danach dur& ein Spiilprogramm regeneriert. Das Ergebnis liegt ca. 8 Min. nach der Injektion der Probe vor; nach je 32 Min. kann eine neue Probe injiziert werden. Der Gehalt an unveranderten Triglyceriden liegt in gebrauchten Bratfetten meist zwisden 60 und goo/,. Besonderes Gewicht wird auf die Beschreibung der Arbeitstechnik gelegt.

D u r h geeignete MaDnahmen muB es moglich sein, die Vergleidbarkeit erheblich zu verbessern.
