Advances in technology of bulk starter production and cheesemaking
Abstract: The paper describes the author's proposals for a bulk starter preparation facility for a cheese creamery handling 500,000 litres of milk per day. The use of Direct Vat Inoculation (DVI) is discussed and work with various systems is reviewed.
