A survey of bulk starter production in the cheese industry

Abstract: The results of a survey of bulk starter production in the United Kingdom are described. The survey was concerned with starter systems, length and number of cultures in rotations. methods and equipment used in bulk starter preparation, bacteriophage prevention measures, and starter quality assurance procedures. Forty-three cheese factories in England, Wales, Scotland, and Northern Ireland were circulated, and replies from 29 were collated and are discussed.
