-The objective of this study was to evaluate total and individual meat yield of boneless cuts, retail cuts, descarded trimmings and carcass bones of 38 Braford castrated steers, slaughtered at 22 months of age after feedlot finishing.Carcasses were classified in three ranks according to fat coverage: even fat coverage over the carcass, with fat thickness of approximately 6-8 mm on the 12 th rib; animals with uneven fat cover, with fat thickness of 3-5 mm and steers with insufficient fat coverage over the carcass, with fat thickness of 1-2 mm. Shrinkage losses decreased as fat coverage increased, and it was 2.57, 2.22, and 1.96%, respectively, for insufficient, uneven, and even fat coverage whereas flank yield increased, reaching values of 13.04, 13.47 and 14.36%. Boneless yield was the highest in carcasses with insufficient fat coverage (78.70%) when compared to even fat coverage (77.62%), which is a result of the lowest trimming percentage, which increased according to coverage fat (4.40; 5.14 and 6.01%, respectively for carcass with insufficient fat coverage, uneven fat coverage and even fat coverage). Back rib and short rib yields were the greatest in carcasses with the largest fat thickness, whereas percentage of silverside and topside were the greatest in carcass with insufficient fat coverage compared to the ones with even fat coverage. Braford castrated steers can be slaughtered with the smallest fat coverage because the low fat coverage does not affect negatively yield of secondary cuts. Increase in coverage fat reduces shrinkage losses mainly in cuts submitted to little fat trimming.

RESUMO -Objetivou-se avaliar os efeitos de classe sexual e nível de oferta de concentrado (0,6 e 1,2% do peso vivo) sobre a composição corporal e a deposição dos principais tecidos e constituintes químicos do corpo vazio de bovinos Nelore de diferentes classes sexuais (machos não-castrados, machos castrados e fêmeas). Foram utilizados 35 animais, alimentados individualmente durante 112 dias e abatidos. Um grupo-referência foi abatido ao início do experimento, com peso inicial médio de 338 kg (machos não-castrados); 308 kg (machos castrados) e 287,5 kg (fêmeas). Os pesos corporais iniciais e de abate ao final do experimento foram, respectivamente, de 345,3 e 435,0 kg para os machos não-castrados; 328,3 e 396,0 para os machos castrados; e 303,9 e 372,0 kg para as fêmeas. A participação da gordura visceral e subcutânea em relação ao peso de corpo vazio total nas fêmeas foi maior, apesar de as taxas de deposição de gordura não terem sido influenciadas pela classe sexual.O nível de oferta de concentrado não afetou a composição corporal de bovinos Nelore. Machos não-castrados apresentaram maior e menor conteúdo de proteína e gordura, respectivamente, no corpo vazio e no ganho de peso de corpo vazio, em relação aos machos castrados e às fêmeas. A taxa de deposição de proteína no corpo vazio foi maior nos machos não-castrados em relação às fêmeas e aos machos castrados, enquanto a taxa de deposição de gordura corporal não diferiu entre as classes sexuais.A classe sexual afeta a deposição dos constituintes do corpo vazio de bovinos Nelore. The percentage of visceral and subcutaneous fat in the empty body weight was greater in the heifers, although the fat deposition rates were not influenced by gender. The concentrate allowance level did not affect the body composition of Nellore cattle. Bulls had greater and lower protein and fat content, respectively, in the empty body and in the empty body gain than the steers and heifers. The protein deposition rate in the empty body was greater for the bulls compared to the heifers and steers, while the fat deposition rate did not differ among the genders. Empty body and carcass chemical compositions, expressed as content of water, ether extract, protein, minerals, and energy, were evaluated in Nellore bulls with different residual feed intakes (RFI). Forty-nine not castrated males, with 343 kg of average initial BW and 398 kg of average slaughter BW, were studied. Animals were divided in two subgroups: reference group (RG) and ad libitum feeding group. At the end of the adaptation period, animals of subgroup RG were slaughtered and the other animals were finished in individual pens for approximately 100 d, until they reached a subcutaneous fat thickness over the LM of 4 mm, and were slaughtered at an average age of 540 d. Body composition was obtained after grinding, homogenizing, sampling, analyzing, and combining blood, hide, head + feet, viscera, and carcass. Tissue deposition rates and chemical composition of gain were also measured based on gains estimated by comparative slaughter technique. No significant differences in slaughter BW (P = 0.8639), empty BW (P = 0.7288), HCW (P = 0.6563), or empty body and carcass rates of gain were observed between RFI groups, demonstrating that the low (-0.331 kg DM/d) and high (+0.325 kg DM/d) RFI animals presented similar body sizes and growth rates. No significant differences in empty body or carcass content of water, ether extract, protein, minerals, and energy were observed between the low and high RFI animals. And also there were no significant differences in empty BW or carcass gain, demonstrating that low and high RFI animals had a similar growth potential. More efficient animals (low RFI) consumed less feed than less efficient animals (high RFI) but presented similar body sizes, growth rates, and empty body and carcass chemical composition.
