Fortification of industrialized foods with vitamins

Abstract: A B S T R A C TVitamins are essential to life. Inadequate eating habits, high caloric intake and metabolic defects lead to micronutrient deficiencies, affecting more than two billion people worldwide. The increasing intake of industrialized foods, combined with low vitamin stability has led to the common practice of adding these nutrients to processed foods. This review discusses the terminology, availability, intake and risk of hypervitaminosis, due to the intake and nutritional importance of foods fortified … Show more

“…However, eggs can supply many other important nutrients, plus vitamin A, for human beings. Liberato & Sant'ana (2006) performed a study in Guatemala in order to achieve the recommended daily intake of vitamin A by people with high risk of deficiency of this vitamin and concluded that the per capita costs for enrichment was US$0.98; for the distribution of capsules was US$1.68 to US$1.86; and for programs of nutritional education that motivated the making of vegetable gardens was between US$3.10 to US$4.16. Retinol supplementation has no relation to the levels of cholesterol in eggs, therefore it is possible to produce enriched feed that promote beneficial effects to health without unfavorable side effects.…”

“…Total fish consumption was calculated at a national population level as the sum of food supply quantity for each of the fish types [22]. Existence of vitamin D fortification policies per country (yes/no) was obtained from a 2006 review [23]. We calculated the average degree of skin pigmentation for each country, based on the 2006 WHO Solar Ultraviolet Radiation report [25] that categorised the population of each country proportionally into light, medium, or deep skin pigmentation, based on race or ethnicity information of each country, using the Fitzpatrick skin tone chart (table 1).…”

“…The sample that had the highest vitamin A content (44,000 IU/kg) more than the recommended value might suggest poor quality control measures in the fortification dosing process or addition of excess overage (Omar, 2005;Liberato and Pinheiro-Sant'Ana, 2006). Figure 2 shows the post-storage vitamin A stability losses in wheat flour samples.…”

“…Measures to provide quality control are necessary to guarantee food fortification in pre-established concentrations. Great variation was found in the concentration of vitamins as pre-established on the labels (Liberato and Pinheiro-Sant'Ana, 2006). A serious problem is measuring errors in the vitamin doses used for fortification during food processing (Liberato and PinheiroSant'Ana, 2006).…”
