Sorghum is the fifth most produced cereal in the world and is a source of nutrients and bioactive compounds for the human diet. We summarize the recent findings concerning the nutrients and bioactive compounds of sorghum and its potential impact on human health, analyzing the limitations and positive points of the studies and proposing directions for future research. Sorghum is basically composed of starch, which is more slowly digested than that of other cereals, has low digestibility proteins and unsaturated lipids, and is a source of some minerals and vitamins. Furthermore, most sorghum varieties are rich in phenolic compounds, especially 3-deoxyanthocyanidins and tannins. The results obtained in vitro and in animals have shown that phenolics compounds and fat soluble compounds (polycosanols) isolated from sorghum benefit the gut microbiota and parameters related to obesity, oxidative stress, inflammation, diabetes, dyslipidemia, cancer, and hypertension. The effects of whole sorghum and its fractions on human health need to be evaluated. In conclusion, sorghum is a source of nutrients and bioactive compounds, especially 3-deoxyanthocyanidins, tannins, and polycosanols, which beneficially modulate, in vitro and in animals, parameters related to noncommunicable diseases. Studies should be conducted to evaluate the effects of different processing on protein and starch digestibility of sorghum as well as on the profile and bioavailability of its bioactive compounds, especially 3-deoxyanthocyanidins and tannins. Furthermore, the benefits resulting from the interaction of bioactive compounds in sorghum and human microbiota should be studied.
This study investigated and compared the occurrence and concentration of macronutrients, moisture, ash, dietary fiber, fatty acids, minerals, carotenoids, vitamins, flavonoids, phenolic compounds, antioxidant activity, phytate and tannin in Brazilian chia seeds grown in the states of Mato Grosso (MT) and Rio Grande do Sul (RS). High concentrations of lipids (31.2g.100g, on average), proteins (18.9g.100g, on average), dietary fiber (35.3g.100g, on average), vitamin E (8,203.6μg.100g, on average) were observed. Similar values for total phenolic compounds and phytic acid in chia seeds from both regions were observed. Chia grown in RS showed higher antioxidant activity than chia grown in MT, and the tannin concentrations were higher in chia seeds grown in Mato Grosso (19.08±1.08eq.catequina/gsample). In conclusion, Brazilian chia seeds showed high concentrations of lipids, proteins, total dietary fiber, minerals and vitamin E.

High-performance liquid chromatography was chosen and the conditions were based on isocratic elution in reverse phase column. Dehydroascorbic acid was determined indirectly after its reduction using dithiothreitol. The use of metaphosphoric acid to stabilize the vitamin C was shown to be required and it was necessary to neutralize the pH of the extract to apply dithiothreitol. The average recovery was 90% in collard and tomato samples. The presence of oil did not interfere in extraction and the methodology can be used to analyze stir fried vegetables.
RESUMO:O presente estudo analisou a diversidade e equitabilidade de plantas alimentícias não convencionais (PANCs) na zona rural de Viçosa, Minas Gerais, Brasil. A pesquisa foi conduzida utilizando a amostragem Bola de Neve com entrevistas semiestruturadas aplicadas à 20 moradores de nove comunidades rurais. Avaliou-se a frequência relativa de citação das espécies (Fr); a diversidade e equitabilidade das mesmas, utilizando os índices de ShannonWiener (H') e de Pielou (J'), respectivamente. As espécies foram listadas pela família, nome científico, nomes populares, ambiente de propagação, hábito de crescimento, formas de consumo, estado de domesticação, ciclo de produção e registro por meio de consultas em herbários do bioma Mata Atlântica. Foram encontradas 59 espécies de PANCs, distribuídas em 30 famílias botânicas e 48 gêneros. As famílias asteraceae e myrtaceae se destacaram pela riqueza florística, contribuindo com 11 e 7 espécies, respectivamente. Espécies da família asteraceae obtiveram as maiores frequências relativas (32,2). Obteve-se índice de diversidade Shannon-Wiener de 1,65 (Base 10), e de equitabilidade de Pielou de 0,93. Os resultados encontrados estão similares à de outros estudos desenvolvidos no bioma Mata Atlântica, observou-se ampla diversidade de PANCs na área de estudo, e o conhecimento sobre estas encontra-se distribuído uniformemente entre os moradores. This study analyzed the diversity and the equity of unconventional food plants (UFPs) in the rural area of Viçosa, Minas Gerais, Brazil. The research was performed using the Snowball sampling with semi-structured interviews, applied to 20 residents from nine rural communities. We evaluated the relative frequency of citation of the species (Fr); the diversity and equity of the same species, using the Shannon-Wiener (H') and Pielou (J') indexes, respectively. The species were listed by its family, scientific name, common denominations, propagation environment, growth habit, application methods, domestication state, production cycle and finally registration through consultation in herbaria in the Atlantic Forest biome. We found 59 species of UFPs, distributed in 30 botanical families and 48 genera. The Asteraceae family and the Myrtaceae one stood out for their floristic richness, contributing to 11 and 7 species, respectively. Species from the Asteraceae family got the highest relative frequencies (32.2). It was obtained the Shannon-Wiener diversity index of 1.65 (Base 10), and the Pielou equity index of 0.93. The results are similar to other studies developed in the Atlantic Forest biome, where there was a wide diversity of UFPs in the study area, and the knowledge of these plants is evenly distributed among the residents.
Chia has been consumed by the world population due to its high fiber, lipids and proteins content. The objective was to evaluate the protein quality of chia untreated (seed and flour) and heat treated (90 °C/20 min), their influence on glucose and lipid homeostasis and integrity of liver and intestinal morphology of Wistar rats. 36 male rats, weanling, divided into six groups which received control diet (casein), free protein diet (aproteic) and four diet tests (chia seed; chia seed with heat treatment; chia flour and chia flour with heat treatment) for 14 days were used. The protein efficiency ratio (PER), net protein ratio (NPR) and true digestibility (TD) were evaluated. The biochemical variables and liver and intestinal morphologies of animals were determined. The values of PER, NPR and TD did not differ among the animals that were fed with chia and were lower than the control group. The animals that were fed with chia showed lower concentrations of glucose; triacylglycerides, low-density lipoprotein cholesterol and very low-density lipoprotein and higher high-density lipoprotein cholesterol than the control group. The liver weight of animals that were fed with chia was lower than the control group. Crypt depth and thickness of intestinal muscle layers were higher in groups that were fed with chia. The consumption of chia has shown good digestibility, hypoglycemic effect, improved lipid and glycemic profiles and reduced fat deposition in liver of animals, and also promoted changes in intestinal tissue that enhanced its functionality.
