<p>The objective in this study was to evaluate the spatial and temporal variability of the beverage quality by applying the fuzzy classification in the final global sensory analysis, for Coffea canephora Pierre ex A. Froehner, in two consecutive harvests. The studied variables were: fragrance (aroma), flavor, bitterness (sweetness), set, balance, cleaning, aftertaste, mouth feel, uniformity, salinity (acidity) and drink (global note). To the average overall scores of the drinks obtained on the cup-tasting at 80.0 points of a sampling, the mesh has applied the function of association of the fuzzy classification linear model to determine the degree of pertinence. The data were analyzed by the descriptive statistics and then by geostatistics to verify the existence and quantify the degree of spatial dependence of the variables. In the interval classified as “very good coffee” is found in the global average grade, in the two harvests. The methodology fuzzy applied in the global beverage note of the coffee conilon seminal made it possible to determine their spatial variability in the same distribution pattern in the two harvests, close ranges, and adjustments to the spherical model, which was confirmed by the spatial correlation of 61.6% among the fuzzy maps for the global score</p>

Adesão e aceitabilidade de cardápios da alimentação escolar do ensino fundamental de escolas de zona rural Adhesion and acceptability of elementary school menus in rural schools ResumoA alimentação adequada e saudável em idade escolar é de fundamental importância, pois auxilia no crescimento, no desenvolvimento, na aprendizagem e no rendimento escolar. A alimentação escolar deve atender às necessidades nutricionais dos escolares e suas preferências alimentares. Objetivou-se avaliar a adesão e a aceitabilidade dos cardápios da alimentação escolar de município da zona rural. Um estudo transversal foi realizado em escolas municipais de Barão do Triunfo-RS, com 240 alunos, da pré-escola à oitava série. Foi aplicada a Escala Hedônica Facial e Verbal, e avaliados os índices de adesão e aceitação dos alunos com relação aos cardápios da alimentação escolar. A frequência da votação por meio da escala hedônica mostrou que 56,32% dos alunos gostaram extremamente da alimentação escolar e 22,42% gostaram moderadamente. A média de adesão dos cardápios nas escolas foi de 86,44% (DP ± 9,02) e a média de aceitação dos alunos em relação aos cardápios foi de 90,64% (DP ± 8,79). Observou-se que, ao se compararem os cardápios, os lanches obtiveram médias significativamente maiores no índice de adesão e de aceitabilidade em relação às refeições. Os índices de adesão e aceitação mostraram-se adequados em escolas da zona rural. É necessário implementar ações de educação alimentar e nutricional para valorizar a alimentação servida na escola. SummaryProper and healthy eating in school age children is of fundamental importance because it assists in the growth, development, learning and school performance. School meals should meet the nutritional needs of school children and their food preferences. The objective of this study was to evaluate the adhesion and acceptability of school meals menus in a rural municipality, specifically that of Barão do Triunfo, RS, Brazil, using a cross-sectional study in public schools with 240 students from preschool to eighth grade. A facial and verbal hedonic scale was applied to evaluate the adhesion rates and student acceptability in relation to the school meals menus. The frequency of voting using the hedonic scale showed that 56.32% of the students liked the school meals a lot and 22.42% liked them moderately. The average adhesion to the school menus was 86.44% (SD ± 9.02) and student acceptance in relation to the menus was 90.64% (SD ± 8.79). It was observed that when comparing the menus, the snacks had significantly higher means on the adhesion index and acceptability in relation to the meals. RESUMOA lógica fuzzy vem sendo aplicada em diversas áreas do conhecimento e nela cada variável possui um conjunto de funções de pertinência representadas em um universo X as quais geralmente exprimem o conjunto de variáveis linguísticas do sistema. Neste trabalho se propõe uma discussão sobre a utilização da lógica fuzzy na aceitação sensorial, a partir da opinião dos provadores quanto ao pão de forma enriquecido com amêndoas e proteínas de faveleira (Cnidosculus phyllacanthus (Mart.) Pax. et K. Hoffm.). Observou-se que o método fuzzy desenvolvido é de fácil utilização e o usuário do sistema só necessita encontrar a curva do centro de gravidade (CG) com maior valor final para indicar a amostra de maior aceitação, podendo utilizar as derivadas das curvas CG no auxílio da detecção da melhor escolha em algumas situações em que lancem dúvida, além de ser utilizado em conjunto com outro método estatístico. In this logic every variable has a set of functions, represented in an X universe, which generally expresses a linguistic variables group of the system. This paper proposes a discussion on the use of fuzzy logic in sensory acceptance, from the taster's views of 'faveleira' (Cnidosculus phyllacanthus (Mart.)Pax. et K. Hoffm.) almonds and protein bread. It was observed that the developed controller method is easy to use and system's user only needs to find the curve of the GC with a final higher value to indicate the sample with greater acceptance. The user may use the derived CG curves aiding in the detection of the best choice in some situations, furthermore used in conjunction with other statistical method.
