Listeria monocytogenes: monitoramento desse perigo biológico na cadeia produtiva de frangos do sul do Rio Grande do Sul

Abstract: (GRAVESEN et al., 2000;UHITIL et al., 2004). Show more

“…This is in agreement with other studies that demonstrated contamination of chicken by L. monocytogenes while in processing plants. Consistent with this study, NALERIO et al (2009) found that 11.7% of samples analyzed in a poultry slaughterhouse, were contaminated by this pathogen. Likewise, MIETTINEN et al (2001) evaluated the presence of this bacterium in chicken from the Finnish local market, and found 62% of their chicken was contaminated by L. monocytogenes.…”

“…In Brazil, there have not been any documented outbreaks of listeriosis associated with the consumption of contaminated food. However, L. monocytogenes has been successfully isolated from different food products (NALERIO et al, 2009;BUENO et al, 2010;GALVÃO et al, 2012).…”

“…There are many analysis and health surveillance practices active in the food commodity chain, especially in the production of pig (Simeoni et al, 2008), chickens (Naleiro et al, 2009), vegetables (Takayanagui et al, 2006), mussels (Pereira et al, 2007), milk (Olival;Spexoto, 2004), among others.…”

“…They consider the importance of surveillance intervening at all stages of the commodity chain only based on the cumulative risks of contamination in the successive production links (Simeoni et al, 2008;Naleiro et al, 2009;Takayanagui et al, 2006) as well as on the need to develop food quality certificates (Bustos, 1999). This problematic even marks some international meetings promoted by institutions such as the Pan American Health Organization (OPS, 2005) that emphasizes the importance of ensuring that safe food is provided through programs and strategies such as the…”
