Listeria monocytogenes is of notable concern to the food industry, due to its ubiquitous nature and ability to grow in adverse conditions. This study aimed to determine the genotypic profile of L. monocytogenes strains isolated from refrigerated chickens marketed in the southern part of Rio Grande do Sul, Brazil. The strains of L. monocytogenes isolated were characterized by serotyping and Pulsed Field Gel Electrophoresis (PFGE). Three different serotypes (1/2a, 1/2b and 4e) were evaluated by PFGE, and the macrorestriction patterns utilizing enzymes AscI and ApaI, revealed five different pulsotypes. The presence of such varied genotypic profiles demonstrates the prevalence of L. monocytogenes contamination of chicken processing environments, which combined with ineffective cleaning procedures, allowing the survival, adaptation and proliferation of these pathogens, not only in the processing environment, but also in local grocery stores.

Listeria monocytogenes is a microorganism that is widely spread in the environment. Contamination by this pathogen can be considered a public health problem because if consumed by pregnant women and the elderly may lead the subject to death, and even has the ability to survive even with the application of sanitizers recommended by current legislation. As an alternative to conventional microbiology used in food industries, methods involving molecular biology has become increasingly used, mainly because these provide lower cost analysis, greater sensitivity, specificity and rapidity. The objective of this study was to investigate the occurrence of L. monocytogenes in slaughter-swine slaughterhouse located in the region of Campos Gerais environment-PR, through the PCR method. The survey was conducted on a pig abattoir fridge and factory fitted which operates under the inspection service of Paraná, for products of animal origin SIP / POA. The company located in the Campos Gerais, Paraná, has average daily slaughter capacity of 400 pigs / day and daily production of 1.5 tonnes fitted. Samples were collected using the technique of surface swabs (Swab). 21 samples collected on the property studied, 3 had confirmatory responses to L. monocytogenes, representing 14% of the total. This study emphasized the importance of monitoring and control of L. monocytogenes in the environment and pig slaughterhouses equipment.

Resumo A globalização da economia alterou o padrão produtivo na atualidade e a formação de cadeias de produção é um fenômeno central nessa nova conjuntura. Cadeias produtivas são processos de extração, produção, transporte, distribuição, consumo e descarte de bens e serviços. Para o seu desenvolvimento existem investimentos governamentais econômicos/financeiros, por vezes em confronto direto com os interesses da proteção da saúde dos trabalhadores e ambiental. Isso porque são gerados diversos danos, riscos e vulnerabilidades sociais, ambientais, sanitárias e ocupacionais ao longo das cadeias. A vigilância em saúde, trabalho e ambiente tem o desafio de enfrentar esses complexos problemas para garantir melhorias para as condições de vida. O objetivo deste ensaio teórico é discutir estratégias de vigilância em saúde, trabalho e ambiente, partindo da noção de cadeia produtiva enquanto redes interconectadas de produção-consumo. O artigo apresenta as principais abordagens teóricas sobre cadeias de produção, especialmente, Supply Chain, Global Commodity Chain, Análise de Filière e Agribussiness, destacando as áreas do conhecimento envolvidas. Discute ainda a fragilidade e incipiência da interseção dos saberes e práticas da vigilância em saúde, trabalho e ambiente com a temática das cadeias produtivas, evidenciando a necessidade de superação da vigilância dos produtos em direção à intervenção em toda a cadeia produtiva, mediante a articulação entre as vigilâncias do SUS. Destaca-se também o papel da academia, dos serviços de saúde e das populações para a implementação dessa vigilância.
