O presente trabalho refere-se à pesquisa de dois cafés exóticos comercializados no Brasil: o café Jacu, proveniente do estado de Espírito Santo, e o café Civeta procedente da Indonésia (cujos frutos maduros são ingeridos e “processados” no trato digestivo de animais). Suas características químicas e físicas foram comparadas às de cafés torrados e moídos comerciais brasileiros (Tradicional, Superior ou Premium e Gourmet). Os valores referentes à composição centesimal, teor de cafeína (1,04 a 1,45%) e sólidos solúveis totais (24,50 a 32,23%) de todas as amostras atenderam aos limites preconizados pela legislação brasileira. Os cafés exóticos, Jacu e Civeta, apresentaram os maiores e menores parâmetros de cor, respectivamente (L* = 20,46 e 11,55; h* = 58,13 e 51,06 e C* = 21,00 e 14,85). Os maiores teores (média de 35,21 mg em equivalente de ácido gálico/g amostra) de compostos fenólicos totais foram verificados nos cafés Tradicional e Premium. Os cafés Jacu e Gourmet apresentaram os maiores teores de 5-ACQ (média de 0,65%) e de trigonelina (média 0,63 g/100 g amostra) e os menores teores de ácido nicotínico (média de 0,022 g/100 g amostra). O café Premium continha os maiores teores de açúcar total (1,37 g glicose/100 g amostra) e o café Tradicional mostrou o maior teor de açúcares redutores (0,27 g sacarose/100 g amostra). O café Gourmet apresentou a maior acidez titulável total (171,13 mL NaOH 0,1 N/100 g amostra) e o Premium a menor (121,31 mL NaOH 0,1 N/100 g amostra).

Saúde Unipar, Umuarama, v. 18 n. 1, p. 33-42, jan./abr. 2014 RESUMO: Este trabalho teve por finalidade buscar informações na literatura que descrevam a interação entre o sistema nervoso central (SNC) e sistema nervoso entérico (SNE), e que demonstrem de que forma a serotonina pode atuar no "eixo intestino-cérebro". A serotonina (5-hidroxitriptamina, 5-HT) originalmente descoberta em 1937 por Vittorio Erspamer é uma indolamina, encontrada em células do trato gastrointestinal, plaquetas e no sistema nervoso central de mamíferos, sendo que cerca de 95% da 5-HT corpórea é produzida no intestino. De acordo com a literatura o trato gastrointestinal é inervado por cinco diferentes classes de neurônios: neurônios entéricos, aferentes vagal, aferentes da coluna vertebral, eferentes parassimpáticos e eferentes simpáticos. Os alvos primários da 5-HT que é secretado pelas células enteroendócrinas são as projeções intrínsecas constituída por neurônios aferentes primários da mucosa e plexo mientérico, e projeções extrínsecas, constituída por nervos que transmitem sensações gerais além de náuseas e desconforto para o sistema nervoso central. Após os dados compilados da literatura fica claro que o SNE desempenha papel singular, podendo agir de maneira independente, mas também mantém sinapses com o SNC, por meio do nervo vago. Dessa forma, ambos os sistemas podem influenciar a atividade um do outro mediante o "eixo intestino-cérebro". Adicionalmente a 5-HT apresenta-se como um importante neurotransmissor envolvido na interação entre o SNE o SNC, importante na regulação da sensação de motilidade e secreção intestinal e também atua na ativação e condução da informação ao SNC. THE BRAIN-INTESTINE AXIS AND THE ROLE OF SEROTONINABSTRACT: This paper aims to seek literature information describing the interaction between the central and enteric nervous system, and to demonstrate how serotonin may be acting on the "brain-intestine axis." Background: Fibromyalgia (FM) is a chronic pain syndrome characterized by generalized skeletal muscle chronic pain. Its etiology is not well defined, because there are several factors that may trigger it such as physical and/or emotional stresses, or a genetic susceptibility, involving serotonergic, dopaminergic and catecholaminergic paths. The objective of this study was to investigate the association between the strength of the lower limb, genetic polymorphism of the serotonin receptor gene HTR 2A in women with fibromyalgia. Methods: In this observational study of case-control type 48 women were evaluated who belonged to the group with FM (52 ± 12 years) and 100 women in the control group (58 ± 11 years). Socio demographic and anthropometric data were collected and peripheral blood samples for DNA extraction; genotypic analyzes were performed by means of PCR in real time by TaqMan® system. The lower limb muscle strength was assessed through the test of sitting down and standing up for 30 s. The chi-square test or Fischer Exact was used for possible associations among the variables; the t-test for independent samples was used to compare the averages among the groups; the value of significance adopted was 5%. Results: There was an association between the polymorphism of the HTR2A gene with FM, demonstrating that carriers of the genotype GG have 24.39 times more likely to develop the syndrome (IC95% 5.15-115.47; p = 0.01). It was observed an association between FM and the test to sit and stand up demonstrating that women with fibromyalgia have lower limb muscle strength (p = 0.01). The study showed that the white race has 3.84 times more likely to develop FM (p = 0.01). Conclusion: The results of this study suggest that women of Caucasian ethnicity with GG genotype or G allele presented greater risk of developing fibromyalgia and that these patients have lower limb muscle strength compared to the control group.
