-Pequi is a native fruit from Brazil, found in the Amazon, Caatinga, Cerrado and Atlantic Rain Forest regions. It is one of the main plants with great potential for sustainable use in Central Brazil. Among 16 species comprising Caryocar genus, three are highlighted: C. brasiliense, C. villosum, and C. coriaceum, of economic importance for families in small communities of Brazilian Cerrado. They are generally organized in cooperatives and use the leaves for preparing medicinal extracts, and the fruits for culinary purposes. When the sale of fresh fruits is reduced, they produce and commercialize fruit preserves, and liqueur products, as well as extract the oil. Harvesting of mature fruits after falling from the tree while keeping some fruits at the plant is the best way for its sustainable production. The internal mesocarp contains from 36 to 66% dry weight of oil having traditional culinary, medicinal and cosmetic uses. This oil has 60% of oleic acid and 35% palmitic acid, thus suitable for industrial fat hardstocks. The presence of the triacylglycerols POO and POP makes the oil of interest for cosmetic and food industries. Both pulp and kernel oils have been studied for their health effects. By physical, enzymatic or chemical modification, the oil has shown potential uses as cocoa butter substitute and zero trans fat product.Keywords: Caryocar sp / Pequi oil Résumé -Le pequi : un fruit brésilien à potentiel pour l'industrie des corps gras. Le Pequi est un fruit indigène du Brésil, issu des régions de l'Amazonie, de la Caatinga, du Cerrado et de la forêt Atlantique. C'est l'une des principales plantes offrant un grand potentiel d'utilisation durable dans le centre du Brésil. Parmi les 16 espèces que compte le genre Caryocar, trois se distinguent (C. brasiliense, C. villosum et C. coriaceum) en raison de leur importance économique pour les familles de petites communautés de la région du Cerrado brésilien. Elles sont généralement organisées en coopératives et utilisent les feuilles pour préparer des extraits médicinaux et les fruits à des fins culinaires. Lorsque la vente de fruits frais est réduite, le pequi est commercialisé sous forme de fruits en conserve ou de liqueurs et de l'huile en est extrait. La récolte de fruits mûrs tombés de l'arbre tout en conservant des fruits à l'usine semble la meilleure voie pour une production durable. Le mésocarpe interne contient de 36 à 66 % d'huile (en poids sec) traditionnellement utilisée à des fins culinaires, médicales et cosmétiques. Cette huile contient 60 % d'acide oléique et 35 % d'acide palmitique, aptes à être utilisés en tant que matières grasses industrielles. La présence de triacylglycérol POO et POP confère à l'huile un intérêt particulier pour les industries cosmétiques et alimentaires. Les huiles de pulpe et de noyau ont été étudiées pour leurs effets sur la santé. Par modification physique, enzymatique ou chimique, l'huile a montré des utilisations potentielles en tant que substitut de beurre de cacao produit sans acides gras trans.

Repeatability of Physical and Chemical Characteristics in Pequi Fruits

The aim of this study was to estimate the effects of populations and mother trees over some characteristics on pequi (Caryocar brasiliense Camb.) fruits as well as their repeatability coefficient. Data came from two populations with 15 mother trees each, covering three years. The following physical and chemical characteristics were evaluated: total fruit weight; external mesocarp weight; number of putamens per fruit; total weight of putamens; total and average pulp weight; and proportion of the weight of lipids and proteins in relation to pulp weight. Analysis of variance was performed using a nested design model. The effects of mother trees within populations were highly significant for all variables under study, while the effects of populations were not for any characteristic, showing that for populations and mother trees, efforts must be focused on the number of mother trees per population rather than on populations. The estimated repeatability coefficients showed high genetic control for total fruit weight; external mesocarp weight; average weight of putamens; average pulp weight; and proportion of the weight of lipids in relation to pulp weight. Therefore, the expression of these characteristics on descendants, by cloning selected mother trees, is likely to be effective. REPETIBILIDADE DE CARACTERÍSTICAS FÍSICAS E QUÍMICAS EM FRUTOS DE PEQUIRESUMO -O objetivo deste trabalho foi estimar os efeitos de populações, matrizes e do coeficiente de repetibilidade em frutos de pequizeiro (Caryocar brasiliense Camb.). Foram coletados dados de duas populações, por três anos consecutivos, das seguintes características: massa massa total do fruto; massa do mesocarpo externo; número de putâmens por fruto; massa total e média de putâmens; massa total e média da polpa; e a proporção da massa de lipídeos e proteínas em relação à massa total da polpa. A análise de variância foi feita usando-se um modelo de classificação hierárquica. Os efeitos de matrizes dentro de populações foram altamente significativos para todas as características estudadas, ao passo que os efeitos destas populações não o foram para nenhuma característica, evidenciando que no dimensionamento de testes de populações e progênies, deve-se optar pelo maior número de matrizes por população em detrimento do número de populações. As estimativas de repetibilidade encontradas permitem inferir um alto controle genético para as características massa total do fruto; massa do mesocarpo externo; massa média de putâmens; massa média da polpa; e teor de lipídeos e, portanto, uma maior probabilidade de expressão destas características nos descendentes clonais de matrizes selecionadas. Resumo -Parâmetros genéticos estimados por meio de delineamentos genético-estatísticos considerando-se efeitos de populações e progênies são inexistentes para o pequizeiro (Caryocar brasiliense Camb.). O objetivo deste trabalho foi estimar parâmetros genéticos e avaliar a eficiência da seleção baseada em caracteres de crescimento em estádio precoce nesta espécie. O experimento foi instalado em janeiro de 2005, utilizando-se mudas de 31 matrizes originadas de duas procedências, em um delineamento em blocos ao acaso com seis repetições e cinco plantas por parcela, no município de Carbonita, MG. Nos anos de 2005 a 2008 avaliaram-se os caracteres: altura de planta (2005; 2006; 2007 e 2008), diâmetro do caule ao nível do solo (2006; 2007; 2008) e diâmetro da copa (2008). As estimativas da herdabilidade no sentido restrito em nível de indivíduo variaram de 0,15 a 0,50. As correlações genéticas e fenotípicas entre os caracteres nos diferentes anos foram positivas e em geral altamente significativas. Estimativas da eficiência de seleção obtidas pela expressão de Hamblin e Zimmermann variaram de médias a altas para todos os caracteres. Concluiu-se que, na hipótese de correlação significativa entre os caracteres avaliados e a produção de frutos, a seleção para produção de frutos, baseada em caracteres de crescimento, pode ser iniciada em estádio precoce. Melhoramento genético.Abstract -Genetic parameters estimated through statistical-genetic designs considering population and progeny effects are lacking for the pequi tree (Caryocar brasiliense Camb.). The aim of this study was to estimate genetic parameters and evaluate the efficiency of selection based on growth traits in the early stages. The experiment was carried out in Carbonita, Minas Gerais, Brazil, on January of 2005, using a randomized block design with 31 progenies, six replications and five plants per plot. From 2005 to 2008 the following traits were evaluated: plant height (in 2005; 2006; 2007 and 2008), stem diameter at ground level (in 2006; 2007; 2008) and crown diameter (in 2008). Estimates for narrow-sense heritability at the individual level varied from 0.15 to 0.50. The genetic and phenotypic correlations between characteristics in the different years were positive and generally highly significant. Estimates of the selection efficiency, obtained using the Hamblin and Zimmermann Expression, ranged from medium to high for all traits. It was concluded that under the premise of a significant correlation between these traits and fruit production, selection for fruit production based on growth traits could be started at an early stage.
