Carcass Characteristics and Meat Quality in Cull Ewes at Different Ages

Abstract: The objective of this trial was to evaluate carcass quality in 74 Santa Ines hair ewes aged 6 to 48 months. Slaughter occurred after fasting and electroshock, followed by dissection of the jugular veins and carotid arteries. Hot carcass weight, hot carcass yield, carcass length, skin thickness, shoulder, neck, loin, belly, rib and leg weights and percentages, leg length, and girth were measured. The rib eye area, color (by CIELAB system), shear force, and cooking loss were also measured. The data were analyzed… Show more

“…O peso/rendimento da carcaça é determinado pela taxa de crescimento, que, por sua vez, varia segundo o grupo genético, o sexo, a idade, a condição fisiológica e a nutrição (PAULA et al, 2017). Para que a produção ovina ocorre de forma mais precoce possível, visando proporcionar ao animal máximo rendimento de carcaça, é importante um manejo alimentar racional, adequado e economicamente viável (ESTEVES et al, 2018;MACIEL et al, 2015).…”

“…The increased amount of BGS in the diet reduced true carcass yield. Leg and loin have the highest commercial values and are thus 'prime' or 'first-class' cuts, given the relatively high proportion of muscle and tenderness (Esteves et al, 2018). However, in this experiment relative amounts of the various cuts were unaffected.…”

“…The head, foot, and skin growth are affected by the animal's age, weight, race, and gender. Esteves et al (2018) working with Santa Ines hair ewes aged 6 to 48 months, observed that younger animals had higher leg yield. As age increases, the commercial cuts number has decreased and the loss of quality characteristics has increased.…”
