Technological Quality of Soybean Oil Obtained From Stored Grain Under Controlled Environmental Conditions

Abstract: Soybean oil has many important components, but for its maintenance it is essential that there is an appropriate storage, temperature, relative humidity and optimum grain moisture content, because the oxidation reactions occur by improper storage, causing product deterioration. The objective of this study was to evaluate the main changes in the quality of soybean crude oil, from grain storage in temperature of 30°C and different relative humidity (59.6%, 67.0% and 76.0%). Soybean grains were packaged in plastic… Show more

“…Soybean grains contain 40% high-quality proteins, 20% lipids (including a high proportion of polyunsaturated fatty acids), 35% carbohydrates, considerable levels of B vitamins, and 5% minerals (such as magnesium, phosphorus, iron, and zinc) [6]. Grains and derivatives are important sources of phenolic compounds-secondary metabolites synthesized by plants during normal development and in response to stress conditions, including pathogen infection.…”

“…Os grãos com maior teor de água apresentaram maior porcentagem de óleo comparados com os armazenados com 11,75% (bu) de teor de água, sendo superior 0,96%. Bischoff et al 10 também observaram maior teor de óleo em grãos de soja armazenados com teor de água mais elevado por 180 dias, em atmosfera modificada. Figura 1.…”

“…At present, soybean (Glycine max (L) Merrill) is one of the most important leguminous crops worldwide and it's highly recommended for human and animal consumption (Bischoff et al 2016) due to its relatively high protein, carbohydrate, amino acid and oil content (Sharma et al 2011). In Brazil, soybean is the most important crop, it generates is the highest income in its agricultural sector, at present, the country is the world's largest soybean exporter (Abraham et al 2020).…”
