The main goal of this research was to investigate the effects of corn smut (Ustilago maydis DC. Corda) infection on the morphological (plant height, and stem diameter), and biochemical parameters of Zea mays L. plants. The biochemical parameters included changes in the relative chlorophyll, malondialdehyde (MDA), and photosynthesis pigments’ contents, as well as the activities of antioxidant enzymes—ascorbate peroxidase (APX), guaiacol peroxidase (POD), and superoxide dismutase (SOD). The second aim of this study was to evaluate the impact of phytohormones (auxin, cytokinin, gibberellin, and ethylene) on corn smut-infected plants. The parameters were measured 7 and 11 days after corn smut infection (DACSI). Two hybrids were grown in a greenhouse, one fodder (Armagnac) and one a sweet corn (Desszert 73). The relative and the absolute amount of photosynthetic pigments were significantly lower in the infected plants in both hybrids 11 DACSI. Activities of the antioxidant enzymes and MDA content were higher in both infected hybrids. Auxin, cytokinin, and gibberellin application diminished the negative effects of the corn smut infection (CSI) in the sweet corn hybrid. Phytohormones i.e., auxin, gibberellin, and cytokinin can be a new method in protection against corn smut.

The common smut of corn, caused by Ustilago maydis, reduces the yield and quality of maize forage. When heavy infestations of corn smut occur, grain yields can be so severely decreased that the most viable economic alternative may be to harvest and ensile the crop. Only a couple of studies have attempted to investigate the influence of aerobic exposure on the nutritive value and aerobic stability of silage, which is prepared from smut-infected maize. In this study, individual whole corn plants were harvested by hand. The plants were distributed into three treatments: 0% infected, 50% infected, and 100% infected. The fresh forage was ensiled in triplicate for a 90-day period. Aerobic exposure lasted for 28 days. Samples were taken on the day of opening and on the 3rd, 7th, 14th, and 28th days. Near infrared spectroscopy (NIRS) calibration equations were used for the prediction of qualitative indicators. Silage prepared from 100% smut-infected maize had comparatively poor quality with dry matter loss, increasing pH and the low amount of starch. It was also distinguished with significant temperature increases from days 15 to 18 of aerobic exposure. Silage prepared from 50% smut-infected maize did not show significant quality changes over the period of the experiment, although it had inferior quality compared to the silage prepared from smut-free maize. While silage prepared from smut-infected maize had an overall worse quality than silage prepared from non-infected maize, it should not have an adverse effect on livestock health or production.

Huitlacoche (Ustilago maydis), an Iconic Mexican Fungal Resource: Biocultural Importance, Nutritional Content, Bioactive Compounds, and Potential Biotechnological Applications

Worldwide, the fungus known as huitlacoche (Ustilago maydis (DC.) Corda) is a phytopathogen of maize plants that causes important economic losses in different countries. Conversely, it is an iconic edible fungus of Mexican culture and cuisine, and it has high commercial value in the domestic market, though recently there has been a growing interest in the international market. Huitlacoche is an excellent source of nutritional compounds such as protein, dietary fiber, fatty acids, minerals, and vitamins. It is also an important source of bioactive compounds with health-enhancing properties. Furthermore, scientific evidence shows that extracts or compounds isolated from huitlacoche have antioxidant, antimicrobial, anti-inflammatory, antimutagenic, antiplatelet, and dopaminergic properties. Additionally, the technological uses of huitlacoche include stabilizing and capping agents for inorganic nanoparticle synthesis, removing heavy metals from aqueous media, having biocontrol properties for wine production, and containing biosurfactant compounds and enzymes with potential industrial applications. Furthermore, huitlacoche has been used as a functional ingredient to develop foods with potential health-promoting benefits. The present review focuses on the biocultural importance, nutritional content, and phytochemical profile of huitlacoche and its related biological properties as a strategy to contribute to global food security through food diversification; moreover, the biotechnological uses of huitlacoche are also discussed with the aim of contributing to the use, propagation, and conservation of this valuable but overlooked fungal resource.
